Responsible for designing and coordinating menus for all restaurant facilities and banquet facilities. Responsible for all food related costs and other cost associated with the food service operations on property. Responsible for facility maintenance with the Food and Beverage areas. Effectively manages the food service staff and ensures Red Carpet Readiness. This position is responsible for providing a high level of guest service and promoting a positive attitude to create a fun and entertaining experience for our guests and team members. Manages employees engaged in food preparation and production. Reviews preparation and production procedures to ensure proper holding/heating temperatures, rotation, flavor, texture, and presentation of food for all outlets. Reviews and updates usage, guest count, and revenue reports to recommend changes in the menu, staffing, production, or methods. Ensures proper education and training of staff on safe handling, preparation, production, and presentation methods. Reviews beginning and ending inventories to determine best usage of food item to minimize spoilage. Investigates, researches, and recommends menu changes. Works with the Purchasing Manager to research availability of new food items. Monitors all departmental expenses (food cost, labor, and other expenses) to ensure compliance with budget. Participates in planning and formulating the departmental budget. Reviews staffing and departmental scheduling to ensure proper customer service and that production levels are maintained. Controls food production to maintain budgeted food cost. Manages all aspects of Utility/Cleaners employees to maintain a clean, sanitary work environment. This includes scheduling, product use, and staffing. Maintains a well-informed staff by conducting quarterly department meetings, daily staff meeting, and newsletters or posting in the department. Monitors all coaching and counseling to assure consistency and timely completion. Monitors and review all performance reviews for all employees to assure accuracy and timely distribution.
