Les postes sont ouverts pour notre premier Fellows situé à Strasbourg–Saint-Denis (Paris 10ᵉ), et le deuxième Fellows situé au Marché Saint-Germain (Paris 6ᵉ) dont l'ouverture est prévue début 2026. Alors si tu veux faire partie d’une aventure humaine et gourmande, tu es au bon endroit ! Descriptif du poste Vous êtes le Chef.fe de cuisine de Fellows et l’ensemble de la cuisine vous est rattaché. Votre supérieur hiérarchique au quotidien est le directeur du restaurant et vous êtes supervisé également par le Chef Exécutif, avec qui vous mettez en place les cartes et les nouveautés produits. Afin de vous seconder dans votre travail, vous avez dans votre équipe rapprochée: deux sous-chef et toute une brigade. Vos missions sont les suivantes: QUALITÉ DE LA CUISINE Vous êtes le garant de la qualité des assiettes et vous vous engagez au quotidien afin que le goût soit irréprochable. Vous organisez et supervisez la mise en place et l’envoi de la carte Vous vérifiez la qualité des produits reçus Vous êtes le garant de la conformité de la carte avec les recettes mises en place par le chef exécutif Vous travaillez en collaboration avec le chef exécutif pour ajuster les fiches techniques et les recettes MANAGEMENT D’ÉQUIPE Vous êtes un chef d’équipe qui inspirez votre brigade au quotidien… Vous gérez les intégrations, les besoins, les évolutions et les frictions. Vous motivez l’équipe au quotidien Vous gérez l’on-boarding et la formation continue Vous proposez des évolutions pour les membres de l’équipe, vous réalisez des entretiens annuels et pilotez les évolutions salariales avec le directeur du restaurant Vous réalisez les recrutements, avec le support du siège Vous formez votre brigade et la faites progresser en continu ORGANISATION ET GESTION DE LA CUISINE Interlocuteur privilégié du siège, vous êtes garant de l’organisation de la cuisine, de sa conformité aux normes d’hygiène et de son efficacité financière. Vous passez les commandes à l’aide des outils de gestion à disposition. Vous supervisez les stocks, les livraisons et les inventaires afin d’éviter le gaspillage et les pertes. Vous gérez les stocks de petit matériel. Vous êtes garant de la bonne utilisation des équipements et supervisez sa maintenance. Vous êtes le garant du respect des normes HACCP et vous formez votre équipe en continu. Vous êtes le garant de l’organisation qui permet l’ouverture et la fermeture quotidienne de la cuisine. Vous appliquez des pratiques de travail écologiques. Vous prenez des initiatives dans votre restaurant afin de cuisiner les stocks invendus et de minimiser les pertes.
