Descrizione del lavoro Mansioni: Il/La Sous Chef è il braccio destro dell'Executive Chef, contribuendo a mantenere e elevare gli standard di eccellenza del ristorante La Taverna. Il candidato ideale sarà un professionista esperto, abile nel coordinamento della brigata e capace di interpretare la tradizione toscana in chiave contemporanea, garantendo un'esperienza culinaria di alto livello. Affiancare l'Executive Chef nella gestione e coordinamento della brigata di cucina. Assumere la responsabilità di una partita specifica, garantendone la preparazione e l'esecuzione impeccabile. Assicurare il rispetto degli standard di qualità e delle direttive dell'Executive Chef. Interpretare la cucina toscana, esaltandone i sapori tradizionali con un tocco di eleganza e innovazione. Garantire il rispetto rigoroso delle norme HACCP e degli standard di igiene e pulizia in tutte le aree di lavoro (celle, frigoriferi, banchi di lavoro). Gestire lo stress tipico di un ambiente di alta ristorazione, mantenendo un atteggiamento calmo, professionale ed educativo verso il team. Collaborare con l'Executive Chef e la direzione per promuovere pratiche sostenibili in cucina. Qualifiche Requisiti richiesti: Esperienza: Solida esperienza pregressa come Sous Chef o Chef de Partie in contesti di ristorazione di alto livello, preferibilmente all'interno di ristoranti gourmet o resort di lusso. Competenze culinarie: Profonda conoscenza della cucina toscana e abilità nell'interpretarla in chiave moderna ed elegante. Abilità di coordinamento: Spiccate capacità di leadership e coordinamento di un team, con un approccio collaborativo ed educativo. Professionalità: Grande attenzione ai dettagli, educazione e capacità di lavorare sotto pressione. Conoscenze linguistiche: È preferibile la conoscenza della lingua inglese Conoscenze tecniche: Ottima conoscenza e applicazione delle normative HACCP e delle pratiche di sostenibilità in cucina. Disponibilità: Disponibilità a lavorare 5 giorni a settimana, su turni, durante tutta la stagione (marzo-novembre).
