Description du poste Sous la responsabilité du Chef de cuisine, vous êtes son véritable bras droit et assurez la direction de la brigade en son absence, dans le respect des valeurs du bistrot : rigueur, générosité et simplicité maîtrisée. Vos missions principales : Manager la brigade en veillant à la montée en compétences de chacun et à la régularité, la qualité et la justesse des plats. Faire preuve d’adaptation pour gérer les variations d’activité. Organiser l’ensemble de la production culinaire et coordonner les différents postes de travail. Contrôler la qualité des productions et veiller au respect des normes d’hygiène et de sécurité alimentaire. Goûter régulièrement les préparations, vérifier et rectifier les assaisonnements. Optimiser les processus de production et proposer des améliorations pour gagner en efficacité et en qualité. Participer aux essais culinaires et être force de proposition auprès du Chef de cuisine. Réaliser les analyses de coûts afin d’assurer la rentabilité. Remplacer le Chef de cuisine lors de ses absences, en prenant des décisions opérationnelles avec confiance et responsabilité.
