Description

Rye Restaurants is looking for a dynamic and hardworking individual to join our team as a Lead Pastry Cook. Our restaurants include The General Muir, Woods Chapel BBQ, TGMBread, Fred’s Meat & Bread & Yalla. This is an early morning position, we start at 4am but your work day is over by 1pm. Being a morning person is a bonus!
TGMEP Lead Pastry
· Supervise, manage and lead the team
· Monitor time management with yourself and the team
· Daily/weekly meeting with team to discuss events, holidays and catering
· Weekly meeting with Pastry Chef
· Fill out/print prep sheet
· Proofread, print and post all charts/scheds sent from Pastry Chef
· Adjust bagel counts with TGMB as needed; update bagel chart accordingly
· Ordering- email all the chefs your orders. SYSCO, GFI, SIDNEY SPICES, SUPPLY SOURCE
· Responsible for putting all deliveries away – can delegate
· Help monitor and manage catering orders
· Monitor and manage the deli speed rack and pastry case throughout the day
· Responsible for making decisions and troubleshooting on the fly when Pastry Chef is not present
· Assist in planning feature nights and events: Sunday Night Spaghetti, seasonal items, holidays, etc.
· Learn and practice new recipes with Pastry Chef
· Responsible for keeping pastry land, bread shop freezer, upstairs in order – can delegated
· TGMB freezer and frozen pastry inventory
· Organize and consolidate product daily: freezers, walk ins, dry storage, pastry land
· Responsible for closing down pastry land; set up for next day success
· Get a notebook or a daily planner
· Look at the catering clipboards and make notes for yourself on prep sheet for the week
· Communicate with all management and chefs your needs, concerns, updates
· Filling up the case is priority unless there is an event/party/holiday to focus on. 86 what you absolutely have to. Do what you can and do your best based on what’s doable.
