Description du poste Fonction Le Chef Cuisinier de Soutien opérationnel (Terrain) est un poste bilingue français dont la responsabilité principale consiste à soutenir les opérations sur le terrain dans le cadre d'une structure 80/20 terrain/bureau, avec contrôle des coûts alimentaires, pratiques de sécurité alimentaire, développement du personnel et soutien aux innovations culinaires pour les unités commerciales Remote and Hospitality Services. Le Chef Cuisinier de Soutien opérationnel (Terrain) accomplit tout ou partie des tâches suivantes : Maintenir l'efficacité et la productivité de la qualité des produits alimentaires. Assurer la cohérence du service de livraison des repas et des normes. Participer au recrutement. Mener les entretiens et intégrer les nouveaux membres du personnel culinaire. Offrir de la formation et de l'encadrement aux employés de cuisine afin de s'assurer qu'ils possèdent les compétences nécessaires pour préparer des repas de qualité, tout en jouant le rôle de mentor et en offrant de la formation et en approuvant les apprentis du programme Red Seal. Être capable de rédiger des recettes et d'en calculer le coût. Veiller à ce que les calendriers de production alimentaire soient alignés sur les calendriers opérationnels des clients. Veiller à ce que la qualité des aliments réponde aux attentes des clients et les dépasse. Maintenir les coûts alimentaires dans les limites du budget alloué afin d'assurer la rentabilité tout en veillant à ce que le contrôle des stocks et les commandes d'épicerie soient précis et effectués en temps opportun. Superviser et gérer les performances de tous les employés de cuisine. Offrir des séances de coaching, des conseils et du mentorat aux employés culinaires. Promouvoir une atmosphère de travail positive et efficace afin d'encourager les normes les plus élevées possibles. Créer, concevoir et mettre en œuvre des menus hebdomadaires conformément aux spécifications et au taux d'occupation. Consulter la direction du site lorsque cela est demandé dans le cadre de la planification des menus. Commander l'épicerie sur le site web GFS dédié aux commandes alimentaires. Déterminer et calculer le coût des aliments lors de la commande d'épicerie Planifier et élaborer les horaires des employés de cuisine en fonction du taux d'occupation.
