Tra i compiti principali di questo professionista rientra la creazione e la preparazione di tutta la linea dolce del locale, che comprende torte, semifreddi, gelati, sorbetti, praline, piccola pasticceria e, spesso, anche la panificazione e i prodotti lievitati per la colazione. Durante il servizio, si occupa personalmente o supervisiona l'impiattamento dei dessert, curando meticolosamente l'estetica e l'equilibrio dei sapori, conscio del fatto che il dolce rappresenta l'ultima impressione che l'ospite riceve dell'esperienza culinaria. Collabora inoltre con lo Chef Pasticcere o con l'Executive Chef per lo sviluppo di nuovi menu, seguendo la stagionalità degli ingredienti. Oltre alla produzione, lo Chef de Partie gestisce la mise en place, ovvero l'organizzazione e la preparazione degli ingredienti necessari prima dell'apertura. Nella gerarchia della brigata di cucina, lo Chef de Partie occupa una posizione intermedia. Risponde direttamente al Pastry Chef o all'Executive Chef e si colloca sopra i Demi-Chef e i Commis.
