Mission of the position:
Provide all technical support in the production processes of tequila and mezcal in order to ensure the sensory and physical-chemical profile of our products.

Function:

  • Management of investment projects for the acquisition of technologies for the determinations required in formulation development projects.
  • Lead projects of improvement of liquids, performed in different productive plants and in formulations.
  • Support plant expansion projects.
  • Provide technical support to innovation projects.
  • Perform corresponding RCPS on market claims.
  • Total management of the formulas of all products.
  • Close the format of sensory results under established procedures and make the vital adjustments so that the products align with the approved profiles.
  • Carrying out tests and start-ups of production plants ensures compliance with the profile of the product to be produced.
  • Preparation of recipes, specifications and procedures of the products to be manufactured in distilleries.
  • Perform tests of stability and shelf life of beverages.
  • Make statistical reports in evaluation of our brands and competition.
  • Make monthly report of sensory evaluation.

Experience Required / Skills / Abilities / Languages:

  • Minimum experience of 5 years in the processes of elaboration of Tequila, (Recepción of agave, Quality assurance of tequila processes, ISO 17025, Cooking, Milling / Extraction, Fermentation, Propagation of yeast, Distilling, Maturation, Formulation and Blend).
  • Minimum expert of 2 years in sensory analysis by means of triangular, peer, descriptive, scale, etc. tests.
  • Management of statistical tools for the analysis of information (descriptive statistics, analysis of variance, regression analysis, design of experiments).
  • Knowledge of laboratory methodologies for the identification and interpretation of the compounds generated at each stage of the production process.
  • High knowledge of the requirements established by NOM-006-S CFI-2012, NOM-070-SCFI-2016 and TTB.
  • Elaboration of strategies to give compliment to the important metric ́s of the area.
  • Knowledge of ISO/IEC 17025.
