Description du poste Dans le cadre d’un remplacement, nous recherchons un·e Chef·fe Sommelier·e F/H en CDI, à compter de janvier 2026, afin de compléter les équipes en salle du Restaurant étoilé Saisons. Vos missions principales s’articulent en cinq axes, et sont les suivantes : Opérationnel : Être responsable et garant de la qualité du service dans les règles de la Sommellerie au sein du restaurant d’application gastronomique Elaborer la carte des vins et des boissons selon la législation des vins et des alcools Conseiller les clients dans leurs choix de vins, effectuer le service dans des conditions optimales de dégustation Manager et animer l’équipe sommellerie Gestion : Être en charge des achats liquide auprès des fournisseurs et gérer le budget de la Sommellerie Gérer la cave du restaurant, passer les commandes, réceptionner les vins, les ranger en tenant compte des nouveaux millésimes Gérer les stocks Formation : Encadrer et accompagner les étudiants et stagiaires lors de leur rotation pratique dans le restaurant gastronomique S’assurer de leur progression selon les objectifs pédagogiques visés et notamment en termes d’acquisition de compétence, organisation du poste de travail, attitude et comportement Participer aux activités pédagogiques telles que les conseils de classe, les jurys de fin d’études, etc. Appliquer et faire appliquer les règlements pédagogiques (règlement interne, des études et examens) Règlement interne : Appliquer et faire appliquer les règles d’hygiène et de sécurité alimentaire Respecter et faire respecter les installations, équipements et matériels et veiller à leur bon état de fonctionnement Appliquer et faire respecter les règles de fonctionnement et horaires de l’équipe Stratégie et rayonnement Participer aux opérations de promotion de l’Institut en France ou à l’étranger Participer au développement des relations en lien avec la profession Cette liste n’est pas exhaustive et vous pouvez être amené·e à réaliser des missions transverses permettant de contribuer à la performance du service.
