Gère le budget de la pâtisserie, contrôler les coûts de manière globale, et travailler à maximiser l’efficacité opérationnelle. Collabore avec d’autres chefs pour élaborer des menus de desserts. Conçoit des menus spéciaux en fonctions des saisons et des événements spéciaux. Négocie avec les fournisseurs d’ingrédients et de matériaux de pâtisserie pour obtenir des produits de qualité au meilleur prix. Evalue régulièrement les performances de la pâtisserie. Prépare des rapports réguliers sur la performance de la pâtisserie pour la direction de l’établissement. Maintient un inventaire précis des produits et fournitures, y compris le suivi des dates de péremption. Assurer que le personnel est informé des allergies alimentaires et des précautions sont prises pour éviter les contaminations croisées. Développe des nouvelles recettes pour les produits de pâtisserie, les tester et les ajuster après validation du chef pour garantir leur qualité. Supervise la préparation des desserts et des pâtisseries, en veillant à leur cohérence et à leur excellence. Gère les coûts liés aux ingrédients, à la main d’œuvre et aux équipements pour maintenir la rentabilité. Surveille les niveaux de stock d’ingrédients et passer des commandes en conséquence. Assure le respect des normes de qualité d’hygiène alimentaire et de sécurité. Cultive la créativité en proposant de nouvelles idées pour les desserts et les présentations. Planifie la production en fonction de la demande en établissant un calendrier efficace. Contrôle la qualité des produits à chaque étape de la préparation. Collabore avec le service de restauration pour répondre aux besoins des clients en matière de desserts. Prépare les éléments nécessaires à la production, notamment la préparation des ingrédients et la décoration des mets. Suit l’actualité avec les dernières tendances en pâtisserie et incorpore des éléments innovants dans ses créations Participe à la fixation des prix des produits de pâtisserie en fonction des coûts, de la demande du marché, et la concurrence. Coordonne avec les autres services pour s’assurer que les réservations pour les desserts et gâteaux spéciaux sont gérées efficacement. Elabore des programmes de formation pour le personnel de pâtisserie, y compris l’apprentissage techniques de pâtisserie avancées. Prépare des fiches techniques pour chaque recette, détaillant les procédures de préparation et de cuisson. Qualifications Diplôme en pâtisserie, arts culinaires ou équivalent Formation complémentaire en gestion ou management culinaire est un atout. Minimum 5 ans d’expérience dans une fonction dans un hôtel 5*. Expérience réussie en management d’équipe et en production haut volume et fine gastronomie. Expérience préalable dans une marque internationale (Accor, Marriott, Four Seasons, etc.) fortement appréciée. Maîtrise parfaite des techniques de pâtisserie, chocolaterie, glacerie et viennoiserie. Bonne connaissance des normes HACCP et des procédures de sécurité alimentaire. Capacité à créer et standardiser des recettes conformes aux exigences de coût et de qualité. Bonne maîtrise des outils bureautiques et logiciels de gestion (Excel, Micros, etc.). Maîtrise du français et de l’anglais (oral et écrit). Esprit créatif et sens du détail. Leadership positif et aptitude à inspirer ses équipes. Excellente organisation, rigueur et discipline. Esprit d’équipe, réactivité et capacité à gérer la pression.
