Description de l'entreprise Présentation de la société : Membre des Relais & Châteaux depuis 1992, le Château de Courcelles **** a ouvert ses portes il y a plus de 35 ans. Situé au cœur du triangle dessiné par les villes de Soissons, Laon et Reims, le Château est aux portes de la Champagne et à seulement 1h30 de Paris. Son hôtel de 20 chambres séduit les clients à la recherche d’un authentique Château du XVIIème siècle où ils profitent d’un parc de 25 hectares composé d’un Jardin à la Française, d’une forêt, d’un terrain de tennis et d’une piscine extérieure chauffée aux beaux jours. Le Château a été distingué d’une Clef Michelin en 2024, garantissant l’expérience d’un séjour singulier. Le restaurant gastronomique étoilé en mars 2025, la Table de Courcelles, est dirigé par le Chef Massimiliano Sena, étoilé durant 8 ans avant de rejoindre le Château en juin 2024. Sa cuisine, tout aussi élégante pour les yeux que raffinée pour le palais, promet une expérience riche en couleurs et en saveurs. En constante évolution depuis quelques années, le Château de Courcelles s’est doté il y a deux ans d’une grande Orangerie accueillant des événements leisure et corporate et a aussi pour projets d’ouvrir une Brasserie de terroir, de nouvelles chambres, une salle de sport, et bien d’autres encore. Le domaine rassemble 50 collaborateurs issus de tous horizons formant une équipe jeune, dynamique et professionnelle. L’activité oscille entre l’accueil des clients à l’hôtel et au restaurant, l’organisation de réunions professionnelles, de mariages ou de réceptions privées ou encore de privatisations du domaine. Nous sommes à la recherche d’un ou une sommelier(ère) pour notre restaurant gastronomique ouvert toute l’année. Reportant au Directeur de Salle et à la Direction Générale, vous assurez la gestion du service main dans la main avec l’ensemble de l’équipe. Homme ou Femme de terrain, doté d’un sens du service inné, dynamique et souriant, vous êtes passionné par la transmission de votre métier et par la gastronomie. Ce poste peut aussi bien être pour le service du déjeuner ou du dîner en journée coupée et très occasionnellement, en journée continue. Restaurant ouvert 7 jours sur 7. Les missions : - Accueil des clients et accompagnement durant le repas, - Participer au service en salle et à la prise de commande, - Proposition de choix de vins en fonction des mets consommés, - Actions de promotion sur certains produits, - Techniques de service telles que découpes de poissons ou viandes, flambage, etc., - Parfaite connaissance de la carte et de ses produits, - Assurer le suivi et le contrôle des salles et des offices, - Réalisation des opérations de fin de service (rangements, préparation pour le prochain service,…) - Établir des méthodes et des techniques de travail afin de participer à la formation des équipes, - Capacité à anticiper et gérer les plaintes des clients, - Garantir l'excellence du service et le respect des standards de l'hôtel, - Coordination quotidienne avec les autres Chefs de Service, - Gestion de l’équipe en l’absence du Directeur de Salle, - Service banquet pour les mariages ou les grands événements. - Participer à l’inventaire et à la gestion des stocks, - Connaissance des règles d’hygiène et de sécurité, - Réception et contrôle des livraisons, - Gestion des approvisionnements et du stock, - Réalisation d’inventaires, organisation de la cave, - Participation aux ateliers : dégustation commentée, visite des caves… - Intégrer dans son comportement la culture de l’établissement, - Faire partager ses connaissances dans le domaine de l’œnologie, - Participer à la visite des domaines et à la suggestion de nouvelles références.
