L’hôtel dispose de 405 chambres insonorisées mêlant confort et modernité. L’hôtel dispose d’un Bar Lounge, d’un restaurant avec une belle terrasse, appelé Le Jardin, d’une salle de fitness et de 6 salles de réunion. L’hôtel a une décoration design et épurée sous le signe de la Tour Eiffel. L’hôtel est situé à 200m de la Tour Eiffel et à 10 min à pied du quai Branly. Description du poste Dans le cadre d'un remplacement, le Mercure Paris Centre Tour Eiffel recherche recherche un(e) Chef de cuisine en CDI. Rattaché(e) au Directeur Général, vous êtes garant de la qualité des prestations servies au client et de l’hygiène, de la sécurité et de la qualité alimentaire dans l’hôtel et co-élaborez avec le Responsable Restauration les offres restauration en cohérence avec le positionnement de l'hôtel (marché, concurrence...) et la politique de la marque. A ce titre, vos principales missions sont : Production Vous êtes co-responsable du respect de la fiche de fonction ; Vous organisez et supervisez la mise en place des préparations en fonction des prévisions d'activité et de consommation ; Vous effectuez et/ou supervisez la préparation des mets ; Vous supervisez les différents secteurs de la cuisine : production froide et chaude, plonge... ; Vous élaborez les cartes et les menus en collaboration avec son second et le Responsable Restauration ; Vous élaborez et veillez à la mise en application des fiches techniques ; Vous êtes au "passe" lors des services : veillez ainsi au respect des délais d'attente maximum préconisés par la marque, à la présentation des mets, à la température des plats, etc. ; Vous coordonnez le travail avec la salle pour assurer le bon déroulement du service ; Vous vous assurez de la bonne transmission des informations aux différents services concernés ; Vous participez activement aux réunions de chefs de service. Management des équipes Vous développez la motivation et l'adhésion de l’équipe cuisine en créant un bon climat de travail ; Vous participez ou validez les recrutements ; Vous organisez l'accueil et l'intégration des nouveaux collaborateurs ; Vous élaborez et/ou contrôlez les plannings de travail en cohérence avec la prévision d'activité en application de la législation du travail ; Vous assurez les entretiens annuels d'évaluation et fixez les objectifs aux collaborateurs. Gestion Vous participez à la commande des marchandises en respectant la politique d'achat du groupe et en favorisant les commandes via ACCORSHOP ; Vous contribuez à la bonne gestion des effectifs pour améliorer le "prime cost" ; Vous respectez les ratios de productivité budgétés ; Vous participez aux inventaires. Relation client Vous vous adaptez aux demandes spécifiques du client ; Vous êtes présent(e) en salle régulièrement et prend en compte les commentaires clients ; Vous êtes force de proposition pour les prestations sur mesure de l'hôtel. Hygiène & Sécurité Vous veillez à la bonne utilisation et au respect des consignes de sécurité liés aux équipements et matériels ; Vous veillez au respect et à l'application des règles d'hygiène (normes HACCP...) ; Vous respectez et faites respecter les engagements de la "Charte Environnement" pris sur l'établissement (économie d'énergie, recyclage...). Gestion Vous élaborez le budget annuel de son service en cohérence avec la stratégie de l'hôtel ; Vous commandez les marchandises en respectant la politique d'achat du groupe (REGAL) et en favorisant les commandes via ACCORSHOP ; Vous respectez les ratios de productivité budgétés ; Vous effectuez les inventaires, la saisie et explique les écarts de consommation ; Vous cherchez continuellement avec son équipe à améliorer les coûts et les ratios tout en préservant la qualité des prestations ; Vous participez activement aux procédures de fin de mois et justifie les écarts.
