Responsibilities:

ABOUT THE ROLE

In the AAK’s Global Confectionery Center of Excellence, located in Aarhus, Denmark, you must be able to combine the production of chocolate and its analysis. You work in close collaboration with dedicated colleagues who all share the passion for chocolate. The team of chocolate technicians contributes in various contexts to AAK’s vision of being “first choice for value-adding vegetable oil solutions”.

You will contribute to the vision by:

  • transforming ideas and projects into finished chocolates with unique properties. Here, developers and customer technicians are supported in the design and execution of development-oriented or customer-driven trials. You will be an active sparring partner in our development experiments.
  • Contributing with a practical approach to teaching AAK’s regional colleagues and core customers in chocolate processes and product properties at AAK academies, and through direct collaboration with AAK regions across the globe and selected customers at Global Confectionery Center of Excellence to showcase the role, benefits and advantages of our ingredients in chocolate and confectionery applications.
  • Supporting sales and marketing through the production of inspiration and taste samples for exhibitions and seminars.

YOUR RESPONSIBILITIES

You will be part of a strong team of six direct collogues who work closely together with hands-on production of chocolate and confectionery to test, prove, document, and showcase our ingredient solutions to the different AAK regions, partners, and customers. You will work with and use advanced analysis equipment in our mini chocolate factory and implement and employ sensory analysis to quantify the benefits of our ingredients in the confectionery applications. You will be involved in the development of new methods for analysis and creative chocolate applications.
The tone of communication in the team is informal, while at the same time we have a strong sense of responsibility for what we deliver.

When carrying out trials, several standard processes and methods are used to a large extent, including.

  • Mixing, rolling and conching chocolates, compounds and fillings
  • Temper chocolate and mold pralines and bars
  • Carry out analysis – durability, texture, viscosity, rheology, sensory, melt profiles (DSC), etc.
  • Analysis correlations in applications, e.g. textures, how chocolate behaves under specific conditions and which statistical correlations can be derived and how it correlates with sensory analysis
  • Operate and maintain existing chocolate and analysis equipment as well as commissioning new equipment
  • Contribute to maintaining a well-functioning, safe and clean chocolate laboratory
