Join Apex Hotels as our new 1819 Bar Manager. We’re undergone an exciting refurbishment of our Front Office, Brasserie and Bar Area at our Waterloo Place Hotel. This is a fantastic opportunity to lead a dedicated team and enhance our guest experience during this transformative period. Be a key part of our journey as we elevate our hotel’s ambience and service standards, creating Edinburgh’s newest destination, 1819, an elegant and refined cocktail bar and lounge offering an impressive range of small plates, drinks, and signature cocktails for guests to explore, sip, and savour. They will experience the best of Edinburgh’s bar scene, where the finest locally sourced ingredients take centre stage.
Our extensive refurbishment has been finished to a very high spec with marble effect tabletops, tan leather furniture, plush velvet chairs, woven linen walls and vintage parquet flooring, bringing a new ambience to our Waterloo Place Hotel.

STARTING THE JOURNEY

On your first day you will begin a structured 12 week learning journey, giving you the skills, knowledge, and confidence to be a great Bar Manager. With this in mind, we are looking for a Bar Manager who:

  • Bar experience at management level
  • In-depth knowledge of Bar functions including stock control and cellar management.
  • Previous experience in recruitment, coaching, training and performance management of staff.
  • Demonstrable experience of the ability to increase bar revenue and profitability
  • Excellent understanding of Licensing Law, Health Safety and Allergen Legislation, ideally a Personal License holder or suitably qualified

Responsibilities:

As Bar Manager with Apex Hotels, you will bring a depth of Knowledge of classic and modern cocktail recipes, techniques and presentation. You will be creative and innovative with the vision to capitalise on sales opportunities. You will be committed to building and developing the team. You will pride yourself on creating an exceptional experience for our guests, ensuring that the highest level of customer care is delivered by the team, leading by example.

As 1819 Bar Manager your responsibilities will include:

  • Develop unique signature cocktails that become hallmark of the bar, cocktails which reflect on seasonal ingredients and also for specific themes or events.
  • Lead, train and motivate the team of bartenders, servers and other staff.
  • Planning and executing marketing campaigns and promotions to attract and retain customers
  • Manage inventory, ordering supplies and maintaining stock levels.
  • Manage budgets, reduce costs and maximise profitability
  • Co-ordinating and managing employees to ensure the delivery of excellent customer service within the bar area.
  • Recruitment and staff training
  • Create a team environment that promotes good employee morale and ensures a high level of commitment, engagement and pride in the department and hotel.
  • Excellent attention to detail, be creative and innovative
