WHAT’S THE GIG, YOU ASK?
This is an exciting opportunity to be part of a brand-new opening and play a key role in establishing the bar operation and infrastructure. As Bar Manager you’ll collaborate with the General Manager to orchestrate seamless planning, recruitment, and execution for this fresh Clays location. You will work with Clays New Openings Manager, to implement the Clays service system and develop the standards of the location and the team.
As Bar Manager you will be accountable for the operational success and the day-to-day delivery providing amazing beverage experiences for our guests. You will be required to ensure the bar is set up for success and maintain a strong connection to our company’s values and its F&B strategy.
In this role, you will oversee a team of approximately 9 bar colleagues you will work closely with the leadership team and our operations director (son of the ‘Maestro’ Salvatore Calabrese) Jon Calabrese, to drive colleague development to ensure the company achieves its succession planning goals through the Clayers Academy.
We are looking for a self-driven highly experienced Bar Manager candidate who has worked in high volume operational businesses. You will be a dynamic thinker and passionate about people, both guests and colleagues, with incredible attention to detail.
Previous experience of working in a fast-paced high-volume food and beverage environment is necessary and experience in another competitive socialising concept desirable.
GUEST EXPERIENCE:
- Ensure that all drinks are prepared and presented to the highest standard.
- Monitor guest feedback and make adjustments in service as needed.
- Interact with Clayer colleagues to gain feedback and ensure guest satisfaction.
- Address and resolve any guest complaints or issues promptly and effectively.
- Maintain a focus on providing exceptional beverage experiences for all guests.
SKILLS, DESIRED QUALIFICATIONS & ATTRIBUTES
- Mental Health First Aid (not essential).
- WSET Level 2 (not essential).
- Fire Warden (not essential).
- First Aid (not essential).
- New Opening Experience (not essential).
- Food Hygiene Level 3

- 3 years of experience in a similar position is desirable.

- Maintain accurate records of bar operations, including inventory logs and financial reports.
- Ensure compliance with all legal and regulatory requirements.
