What you will do?:

  • Lead and motivate the bar team with a hands-on, dynamic approach during overnight shifts
  • Oversee nightly operations of the bar, ensuring smooth workflow, efficient service, and guest satisfaction
  • Ensure all health, safety, and hygiene protocols are followed for food and beverage operations
  • Conduct nightly cash handling, reconciliations, and POS system management
  • Train, mentor, and develop team members, fostering a culture of growth and excellence
  • Monitor weekly inventory, oversee stock control, and ensure accurate reporting of usage and wastage
  • Handle guest enquiries and complaints professionally, ensuring timely resolution and positive outcomes
  • Maintain compliance with liquor licensing regulations and company policies at all times

More about you:

  • Current Responsible Service of Alcohol certificate and Responsible Service of Gambling certificate
  • Previous experience managing a high-volume bar, ideally in a hospitality or casino environment
  • Strong leadership skills with the ability to motivate and manage a diverse team
  • Proven experience in managing nightly operations, including cash handling, reporting, and end-of-shift procedures
  • Comprehensive knowledge of licensed premises management requirements
  • In-depth understanding of cocktails, wines, beers, and other beverages, including trends and service protocols
  • Experience implementing and maintaining HACCP requirements and safety standards
  • Strong communication, conflict resolution, and decision-making skills
  • Ability to work independently, handle pressure, and maintain a professional demeanour during overnight shifts
