BEVERAGE MANAGER

We are looking for a Beverage Manager who is innovative, creative, and experienced in crafting cocktails and wine knowledge. A professional restaurant leader inspired to lead the team into creating memorable experiences for our guests and poised to mark our position as the hot spot for the best cocktails in Toronto.

Responsibilities:

KEY RESPONSIBILITIES

The Beverage Manager is responsible for helping the restaurant exceed service, sales, and profit objectives along with supervising and directing team members in daily work activities. The Beverage Manager is responsible to own, curate, and execute all aspects of the beverage program throughout the hotel.

To successfully fill this role, you should be able to demonstrate the attitude, behaviours, skills and values as follows:

  • Oversee and manage restaurant & bar service; ensure the restaurant operations is running smoothly & efficiently
  • Create and streamline processes for ordering, maintain and controlling inventory levels, setting PARS, compose and create hot, cold, non-alcoholic and water programs, including the Afternoon Tea and coffee programs
  • Costing, sales mix analysis, menu programing
  • Manage, maintain and ensure cost controls, security measures and enforce programs and practices to reduce risk
  • Own and manage the wine program
  • Manage, maintain draught systems, ensuring regular lining cleaning and maintenance
  • Support the General Manager with consistent wine and beverage trainings and tastings for the teams
  • Support the Director of F&B with Topline Beverage revenue budgets, targets
  • Responsible to manage the beverage cost and achieve company targets and goals
  • Ordering and Inventory implementations
  • Manage staff & enforce bar and lounge standards, steps of service, providing them with feedback; maintain a high level of employee morale
  • Ensure positive guest service in all areas; investigate and respond to complaints, taking any and all appropriate actions to turn dissatisfied guests into return guests
  • Responsible for innovation and cocktail program consistency
  • Implement initiatives to drive beverage and increase total average check spend
  • Manage beverage cost and ordering, manage and control costs
  • Recruit, train, motivate bar staff; oversee continual training and performance; keep employee records up-to-date and organized
  • Create an engaging and energetic environment where all associates work as a highly functioning team
  • Create, own, manage and update the beverage list in coordination with the General Manager
  • Recommend food and beverage pairings; advise guests on beverages based on their personal tastes and food choices
  • Adhere to company standards and service levels to increase sales and minimize costs, including food, beverage, supply, utility, and labor costs
  • Manage Bar and Lounge roasters effectively with labor standards and business ebbs and flows
  • Create, own, communicate and manage beverage glassware breakage program
  • Support and work with Director of F&B on all thing’s beverage in the facilities

To successfully fill this role, you should be able to demonstrate the following:

  • Minimum of 1 year experience in the field as a Bar leader & 3 years in Bartending service
  • In depth knowledge and expertise of the hospitality / food & beverage service industry
  • Sommelier & Beverage menu curation experience an asset
  • Analytical mindset, with an ability to review P&L on beverage costs & ensure profitability
  • Self-motivated with a high degree of integrity, honesty and ethics; self-starter, flexible, and able to work independently
  • Ability to multi-task and change priorities constantly as needed in a fast-paced environment
  • Excellent interpersonal and communication skills to develop and maintain strong relations with guests and all team members
  • Strong computer skills including Microsoft office software, POS system, Reservation system, and other related applications
  • Flexible schedule. Must be able to work evenings, weekends, and holiday
