THE 5* GLENLO ABBEY HOTEL, GALWAY (PART OF THE MHL HOTEL COLLECTION) IS CURRENTLY RECRUITING FOR A CHEF DE PARTIE.

Glenlo Abbey Hotel and Estate is located on the banks of Lough Corrib on a 138-acre estate with the original 18th century manor house dating back to the 1740’s. The Hotel comprises of 73 bedrooms including 6 suites, 11 Luxury Self-Catering Lodges, Corrib Room (catering for meetings, events, and weddings for up to 170 guests), River Room Restaurant, Palmers Bar and Kitchen, 2AA Rosette Pullman Restaurant (set aboard original Dining Carriages from the Orient Express), Glo Spa & Wellness, a 9 Hole Christy O’Connor Jr designed Championship Golf course and a 21 bay driving range.

Responsibilities:

MAIN PURPOSE OF THE JOB

Assist in the planning, preparation and delivery of a 5 star level of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications.

MAIN DUTIES AND RESPONSIBILITIES

  • Prepare mis-en-place as required.
  • Prepare and present food to Company standards as instructed by your Manager.
  • Ensure correct portion control as instructed by your Manager.
  • Operate with a cost effective approach that will not damage the quality of the product provided.
  • Maintain a close working relationship with the rest of the Kitchen Team and those in other areas as required in order to provide a smooth and efficient service.
  • Assist with menu designs that are popular, stylish and sell well, as well as group menus that exceed the wishes of clients.
  • Keeping equipment costs as low as possible, managing the overall maintenance and service program for your section and keeping all equipment properly cleaned and maintained.
  • Carrying out regular stock takes to ensure costs are controlled and that all stocks are accounted for
