We are currently looking for a Full Time Clubhouse Chef, reporting to our Catering & Hospitality Manager, to lead the day to day kitchen operation, producing top quality food and managing kitchen staff. The role predominantly will be to fulfil the members bar catering, Concorde specialist lunches and occasional dinners, our midweek conference offers, and event day site catering. You will also be creating menus for packages alongside the catering and Hospitality manager, maintaining strong cost effective planning across all menus, reducing wastage across the kitchens and utilising the best produce and suppliers. You will be responsible for maintaining our 5* hygiene rating with continual support and training of the kitchen team, keeping all compliance records up to date.
The ideal candidate will have a strong background in high numbered catering and bespoke a la carte dining events, with experience in running fast paced kitchen operations. You will have a good understanding of ingredients, menus, costings and planning along with good attention to detail and a flexible adaptable approach. You will be able to proactively engage the teams along with maintaining training on kitchen systems and processes and paperwork as required.
The role is full time working 48 hours on a 5 out of 7 rota basis to suit our business needs. Weekend and Bank Holiday working required including New Year’s Day and Museum event days.
