Job Introduction
As an Executive Head Chef at Sodexo AerCap, you are also a leader and innovator. Responsibilities:
WHAT YOU’LL DO:
- Lead the delivery and production of quality food for the contract, including one kitchen and one main restaurant area with a Barista Service.
- Actively seek organic growth within AerCap and support the expansion of Sodexo services where appropriate.
- Oversee the management of the catering team, ensuring high-quality service and providing coaching and training as needed.
- Develop the hospitality offering, engineer menus, and innovate food options for the site.
- Ensure compliance with the company’s accountancy, documentation, and administration procedures, completing necessary weekly returns accurately and on time.
- Manage costs and expenditures within budgeted levels, including labour, expenses, and cash purchases.
- Plan, cost, and document menus, ensuring consistency across the business.
- Maintain stock levels within agreed targets and order supplies from nominated suppliers.
- Maximise profitable sales by introducing and maintaining food service brands to the required standard.
- Monitor and maintain consistent methods of food preparation, production, presentation, and service, ensuring compliance with Sodexo’s standards and procedures.
- Conduct regular reviews of operating costs, margins, controls, and menu costings to ensure optimum profit.
- Comply with all Company & Client policies, site rules, and statutory regulations, including Health & Safety, food hygiene, safe working practices, cleanliness, fire, and COSHH.
- Ensure all equipment is in safe working order, regularly checked, and serviced, reporting any faults to management and ensuring equipment is not used until safe.
- Ensure the prompt and efficient preparation and service of all meals and breaks, meeting the standards of the food service offer and exceeding Client, Customer, and Sodexo satisfaction.
