Description:
Ashford Castle, Ireland’s first Forbes Five Star Hotel, is now recruiting for an enthusiastic, innovative and passionate Executive Pastry Chef to lead the pastry offering at our renowned property.
Key responsibilities of the Executive Pastry Chef will include:
- To be fully familiar with HACCP and ensure that the section conforms to the legal guidelines highlighted within these regulations.
- To lead, guide and participate where necessary in preparation and cooking of all food required on the property.
- To innovate and create unique culinary experiences to delight our guests.
- To conduct training with all kitchen team members and ensure compliance to hygiene, health and safety policies and procedures.
- To receive stock, checking thoroughly for quality and also quantity against invoices and purchase requests, and to return and follow up any substandard items.
- To ensure that the kitchen head count and labour costs are kept within the budgetary levels set and to adjust accordingly in line with business levels.
- To ensure that good communication channels are maintained in order to ensure that all staff are motivated and focused within the department
The ideal candidate for the Executive Pastry Chef position should:
- Possess excellent leadership and communication skills
- Sound awareness of menu planning and development
- Be able to lead and motive the team
- Have a track record of training and developing individuals to achieve their best
- Have an understanding of how to keep costs in line and wastage kept to a minimum
- Should have proven experience in this role a 5 star hotel
