SKILLS, KNOWLEDGE AND ABILITIES REQUIRED:

  • A passion for food!!!
  • Knowledgeable of Alberta Employment Standards and Alberta Human Rights and Alberta Occupational Health & Safety Standards for the operation
  • Proficient in Human Resources functions such as recruitment, corrective actions, performance reviews, training, coaching, team building
  • Excellent communication skills, both written and verbal

EXPERIENCE, TRAINING AND EDUCATION :

  • Journeyman Red Seal Certification
  • 3-5 years’ experience as sous chef within a full service property.
  • Food Safe certification or Provincial equivalent.
  • Menu and service design experience in a modern, upscale restaurant.

Responsibilities:

The Executive Sous Chef is responsible for assisting in managing the kitchen and stewarding function, for directing all aspects of food preparation and presentation for food outlets and catering functions, as well as meeting the highest levels of quality and cost-effectiveness consistent with hotel standards and performance requirements.
1. Responsible for assisting in the overall management of the Food Preparation Department.
2. Ensure that all food products produced are of the utmost quality and appeal.
3. Lead the operation of the kitchen in the absence of the executive chef.
4. Provide training, cross-training and performance management for kitchen staff.
5. Act as a liaison with other departments.
6. Maintain all occupational standards i.e.: Food Safe, WHMIS, Health and Safety Policies.
7. Assist with monthly inventories and maintain budgeted food cost.
8. Provide a creative and fun environment.
9. Assist with the creation and design of all menu and recipe standards, keeping cost guard up-to-date and accurate.
10. Coordinate work schedules to reflect the business needs as per Banquet Event Orders.
11. Other related duties as assigned.
