We are seeking an accomplished artisan baker with a wealth of experience and a genuine passion for the science of sourdough, natural fermentation, and freshly milled flour. We are proud to be amongst a world wide community of bakers returning to the tradition of onsite stonemill

WHAT WE’RE LOOKING FOR

You must have a minimum of five years of experience in a similar role and possess a keen interest in the science and tradition of sourdough baking. We are looking for someone dedicated to consistently high standards and excited about using fresh, local ingredients, including freshly milled Western Australian flour.

Responsibilities:

ABOUT THE ROLE

As artisan baker at Miller + Baker, you will oversee daily bread production in our vibrant Lake Street bakery. We are primarily a retail bakery with a devoted following of sourdough enthusiasts. We take pride in our collaborations with Perth’s most innovative chefs, providing the exceptional sourdough that enhances their award-winning menus.
We are also proud to be part of a worldwide community of bakers returning to the tradition of milling flour onsite with our New American Stonemill, elevating the quality and flavour and sustainability of our products.
Located in a diverse urban neighbourhood just a 15-minute walk from Perth’s central transport hub, our bakery is a cornerstone of the community.

YOUR TASKS WILL INCLUDE:

  • Managing production, conducting daily quality checks, and maintaining sustainable levels of levains, bread, and dough-related inventory.
  • Making recommendations and implementing effective bakery processes.
  • Overseeing the production of various doughs and breads, including preparing, mixing, and baking sourdough loaves and specialty breads according to calculated weekly numbers and wholesale orders.
  • Ensuring cleanliness of equipment and compliance with occupational health and safety regulations prior to production runs.
  • Evaluating the quality of raw materials and accurately weighing ingredients.
  • Kneading, maturing, cutting, moulding, mixing, and shaping bread and pastry doughs.
  • Monitoring oven temperatures and product appearance to determine optimal baking times.
  • Coordinating the forming, loading, baking, unloading, de-panning, and cooling of batches of bread and rolls.
  • Operating bakery machinery, including bun rounders, mixers, and deck ovens.
  • Maintaining cleanliness of baking trays, tins, and other cooking equipment.
  • Collaborating with other bakery sections (e.g., Pastry team, Front of House, Milling) to share space, ingredients, and labour.
  • Using your creativity to develop new recipes while ensuring appropriate pricing.
  • Working with the management team to promote and enhance the Miller + Baker brand.
  • Assisting with the implementation of a regular cleaning and maintenance schedule for all kitchen areas and major equipment.
  • Contributing to the creation and maintenance of bakery procedures and policies for hygiene and OHS.
