We are currently recruiting for an F&B Cost Controller to join our team at the Sheraton Grand Hotel & Spa.
Sheraton Grand Hotel & Spa is one of Scotland’s leading 5 star hotels. As the largest 5 star hotel, we also have the biggest banqueting and meeting facilities of any hotel in Edinburgh with a capacity of up to 500 and our One Square Restaurant and bar.

REQUIREMENTS:

We are looking for someone who is energetic, passionate, self-motivated and who is ready to take the next step on your career path. Ideally you will have at least 3 years’ experience within a similar environment, with supervisory experience preferred. We are looking for candidates who have a flexible approach to working hours and a desire to continually improve our product.

Our expectations of you will be that you are able to work on your own initiative as well as part of a team and have a strong desire to improve on your skills and knowledge as well as:

  • Knowledge of Excel, Birchstreet and P.O.S (Micros Symphony).
  • Background in Food and Beverage and/or Finance would be advantageous.
  • Numerate with knowledge of financial reports used in hospitality.
  • Demonstrate assertiveness to implement Marriott audit policies and procedures within Food and Beverage.
  • Must demonstrate an ability to develop employee knowledge to increase departmental profitability.
  • Must be able to communicate clearly and develop relationships with all levels of staff and management.
  • Must demonstrate a desire for working in the hospitality industry.

Responsibilities:

ROLE:

To ensure the smooth running of day to day goods receiving and stores operation. To assist the Food and Beverage operation to achieve budgeted F+B costs and manage all aspects of Birchstreet (purchasing system) and POS (Micros Symphony) within the hotel and provide training when required.

ESSENTIAL FUNCTIONS:

  • Produce monthly F+B cost control report for Senior Management detailing achieved cost against budget, inventory results and identifying and explaining potential action points.
  • Provide concise and accurate reconciliation of Food and Beverage costs including theoretical costing.
  • Perform end of month tasks relating to all inventories (entry and analysis of physical counts) in line with Marriott policies and procedures.
  • Produce Monthly outlet inventory results detailing credits/debits for adjustments such as management rebates, cocktail sales, wine by the glass, re-cycled beverage, food to bar etc.
  • Perform goods receiving tasks in line with Marriott policies and procedures.
  • Produce monthly (or as required), detailed menu analysis based on recipe costing.
  • Produce daily flash food cost report for Executive Chef and team.
  • Perform POS menu engineering tasks as required as well as managing the POS system.
  • Monitor par stock levels in all Beverage outlets in line with Marriott policies and procedures.
  • Ensure Procure Wizard is updated with accurate goods received, outlet revenues, stock transfers and inventory counts.
  • Balance cellar on weekly basis and investigate any variances.
  • Oversee monthly stock counts, liaising between hotel team and external stock takers.
  • Provide F+B Manager with suggestions for future price structuring of menus, utilising knowledge of current trends and unit prices.
  • Perform continual housekeeping duties in Procure Wizard and maintain correct set up of products for purchase and recipe use.
  • Liaise with external auditing company (CAPCON) to ensure the property is maximizing the efficiency of its stock control systems
  • Liaise with beverage suppliers regarding any inconsistencies of deliveries, and building relationships to ensure this is minimized.
