Description:

Position: Food and Beverage General Manager
Location: Portmarnock Resort & Jameson Golf Links
Salary: Competitive Salary Package plus bonus scheme
Reports to: Regional Director of Food and Beverage
Contracted Hours: 45 per week across 5 working days dependent upon business needs
About Us: Portmarnock Resort & Jameson Golf Links is a premier destination known for its
stunning sea views, exceptional hospitality, and a diverse array of dining and event
experiences. Our resort features a variety of outlets, including the Jameson Bar and
Restaurant, Sea View Restaurant, The Snug, JJ’s, 1780 Restaurant, and extensive Conference
and Events facilities. We also specialise in hosting weddings and celebrations of life.
We are looking for an experienced and driven Food and Beverage General Manager to lead
and oversee all food and beverage operations across the resort.

QUALIFICATIONS:

  • Proven experience as a Food and Beverage General Manager or similar role in a highend resort, hotel, or restaurant environment.
  • Strong leadership skills with the ability to manage and develop a large team.
  • Excellent financial management skills, including experience with P&Ls, budgeting,

and cost controls.

  • Expertise in food and beverage operations, including inventory management,

supplier negotiations, and quality control.

  • Experience in conference, weddings, and event operations, with a track record of

delivering successful events.

  • Strong collaboration skills, across all departments in particularly working with head

chef, sales team and restaurant management.

  • Exceptional communication and interpersonal skills.
  • Strong problem-solving abilities and attention to detail.

Responsibilities:

  • Leadership and Management:
    Lead, inspire, and manage a diverse team across all F&B outlets. Drive operational

excellence, team engagement, and exceptional guest experiences.

  • Financial Acumen:

Develop and manage budgets, forecasts, and financial plans. Oversee P&Ls, ensuring
profitability and cost control. Monitor food and beverage costs, inventory, and
labour costs to maximise profitability while maintaining quality and service

standards.

  • Operational Excellence:

Ensure the smooth operation of all F&B outlets. Implement and maintain operational

policies, procedures, and best practices to optimise guest experience and efficiency.

  • Kitchen Responsibilities:

Collaborate closely with the Head Chef to oversee kitchen functions and operations,
ensuring consistency in quality, menu development, food safety, and hygiene

standards. Work to align kitchen performance with financial goals.

  • Conference, Weddings, and Events Operations:

Oversee the planning, coordination, and execution of all conference events,
weddings, and celebrations of life. Collaborate with clients and the events team to

deliver seamless, memorable experiences that exceed expectations.

  • Labour Controls:

Implement effective labour management strategies, including scheduling, staffing,

and payroll control, to optimise efficiency while maintaining high service standards.

  • Food and Beverage Costs:

Oversea supplier relationships, negotiate contracts, and monitor purchasing to
control food and beverage costs. Ensure all outlets operate within budgetary

guidelines.

  • Talent Training and Development:

Lead the recruitment, training, and development of the food and beverage team.
Foster a culture of continuous improvement, ensuring that team are well-trained,

motivated, and aligned with the resort’s goals.

  • Guest Experience:

Maintain a strong presence in all outlets, interacting with guests to ensure
satisfaction. Address guest feedback promptly and professionally to continuously
improve the resort’s offerings.
