Description:

The post holder will specialise in menu development, nutritional and allergy analysis, advising on and sometimes delivering training needs for Chefs, offering guidance, ideas and practical one to one training where required.
The post holder will ensure high quality standards are maintained across all kitchens, achieving consistency between kitchens.
The post holder will be responsible for the management of the head chef and will have a close working relationship with the Head Chef /QA Manager to ensure collaborative working on a number of tasks and activities .
The post Holder will monitor and report on commercial activity, against monthly budgets and other targets.
The post holder will act as a role model, presenting a positive image of self, team and organisation
To design and present new menu ideas to the facilities manager, Head Chef and wider Kitchen team, which will then be rolled out across the Trust to staff and patients.
research, investigate and create innovative dishes, keeping within the budget requirements, and keeping up with trends - ensuring commercial targets
Regularly review and develop retail and catering offer to increase service potential and significantly increase income.
Rota management - support the Head Chef in the effective deployment ensure staffing levels and kitchen areas are covered on a daily basis.
Provide advice and support as required to the kitchen team,give feedback in a manner likely to improve performance.
Oversee/ support the Head Chef with the management of performance issues
Organise and prioritise own workload in a manner that maintains and promotes quality.
Ensure effective management of risks within the catering department, with particular reference to health and safety legislation.
Ensure compliance with Hazard Analysis of Critical Control Points (HACCP).
Report mechanical and structural defects and make out requisitions for their repair to the Estates Department or other relevant parties.
Identify financial pressures, providing solutions to control and mitigate such pressures.
Take the lead in monitoring revenue and expenditure ensuring the service provided continues to meet customer requirements.
To step down to support the duties of the Head Chef position a short term absence.
