Position Summary
Under the general supervision of Food Service Lead Hand/Supervisor/First Cook, the incumbent assembles, prepares and serves food and beverage products and maintains cleanliness of the Food Services areas according to detailed procedures, assisting in providing service to the students, the community and the guests of Victoria University.

QUALIFICATIONS REQUIRED:

Education
High school graduation or equivalent combination of education and experience.
Experience
Past Food Service experience is recommended but not required.
Other
Ability to maintain co-operative working relationships with staff, and customers. Ability to communicate effectively in English (oral and written). Physical ability to perform duties described and to use indicated equipment. Smart Serve and WHMIS an asset.

Responsibilities:

The following illustrative tasks indicate the level of skill required, and the extent of responsibility involved in this job. They in no way limit the incumbent to the tasks indicated

Service in the Dining Hall

  • Assemble work area with appropriate products and equipment prior to mealtimes
  • Assemble, prepare and serve food as per customer request, placing emphasis on customer service and portion control
  • Prepare sandwiches, salads, and desserts as required
  • Advises and provides information to customers, reporting any concerns to supervisor/lead hand
  • After the meal, remaining food stuffs are sent to the kitchen for storage or disposal
  • Clean dishes are unloaded from the dumbwaiter and placed in the appropriate area.
  • Maintain stock levels by replenishing supplies from stock rooms
  • Keep equipment and work area clean and sanitized according to recognized health, safety and sanitation guidelines
  • Maintain cleanliness in the dining hall according to detailed procedures
  • Report any broken or malfunctioning equipment to the lead hand/supervisor on duty
  • Other duties as assigned

Service at Functions

  • Accurately interpret function sheet, determine supplies needed, time and place of service
  • Assemble work area with appropriate products and equipment prior to mealtimes
  • Under the direction of the Functions Supervisor or Lead Hand, set up the function as requested by the customer
  • Assemble, prepare and serve food as per customer request, placing emphasis on customer service and portion control
  • Advise and provide information to customers, reporting any concerns to supervisor/lead hand
  • Monitor guest consumption of alcohol and ensure AGCO rules are followed
  • Monitor usage of function items to ensure a successful event
  • Clean up and remove all garbage to appropriate storage location
  • Remove soiled dishes, glassware, cutlery, linen and other supplies from function location and return to appropriate location
  • Return uneaten food to Burwash Hall for proper disposal
  • Report any broken or malfunctioning equipment to the lead hand/supervisor on duty
  • Other duties as assigned

Service at the Ned’s Café

  • Assemble work area with appropriate equipment products and equipment
  • Prepares, heat and finish simple food items. Bake premixed food products
  • Portion and wrap foods. Package takeout foods
  • Assemble, prepare and serve food as per customer request, placing emphasis on customer service and portion control
  • Advise and provide information to customers, reporting any concerns to supervisor/lead hand
  • Enter cash and account charge transactions into POS database
  • Keep records of quantities of food used
  • At closing, count and separate float and cash from daily sales Place all money in the safe
  • Ensure menu and any information signage is current and in good repair
  • Monitor guest consumption of alcohol and ensure AGCO rules are followed
  • Maintain stock levels by replenishing supplies from stock rooms
  • Clean as you work, keeping equipment and work area clean and sanitized according to recognized health, safety and sanitation guidelines
  • Assist in unpacking and storing supplies in refrigerators, freezers, and storerooms
  • Maintain cleanliness in the Ned’s Café according to detailed cleaning procedures
  • Operate a commercial dish machine to wash dishes, glassware, and cutlery according to recognized Department of Public Health standards
  • Clean and sanitize dishes and other items by hand
  • At the end of the meal, remove kitchen garbage, recycling and composting and take to designated storage location
  • Report any broken or malfunctioning equipment to the lead hand/supervisor on duty
  • Other duties as assigned

Service at High Table

  • Assemble work area with appropriate equipment products and equipment
  • Assemble, prepare and serve food as per customer request, placing emphasis on customer service and portion control
  • Advise and provide information to customers, reporting any concerns to supervisor/lead hand
  • Monitor guest consumption of alcohol and ensure AGCO rules are followed
  • Enter cash and account charge transactions into POS database
  • At the end of High Table service return float, cash and High Table chits to lead hand/supervisor for processing
  • Maintain stock levels by replenishing supplies from stock rooms
  • Keep equipment and work area clean and sanitized according to recognized health, safety and sanitation guidelines
  • Maintain cleanliness in the Senior Common Room and High Table area of the dining hall
  • Other duties as assigned

Cashier duties

  • Record customer activity by scanning student Tcard or keying student number into the POS database. Enter guest transactions into the POS database (cash or ticket)
  • At the end of each meal return float, cash and tickets to lead hand/supervisor for processing
  • Monitor flow of customer traffic reporting any problems promptly to lead hand/supervisor on duty. Ensure the security of students during meal hours
  • Retrieve reports from customer database as needed
  • Ensure menu and any information signage is current and in good repair
  • Assemble bag meals for residents in the kitchen prep area
  • Ensure ready made desserts are cut, placed on display trays, covered and sent up to the servery
  • Keep equipment and work area clean and sanitized according to recognized health, safety and sanitation guidelines
  • At the end of each meal, assist the dining hall serving staff in cleaning Burwash Dining Hall
  • Other duties as assigned

Dishwasher duties

  • Operate a commercial dish machine to wash dishes, glassware, and cutlery according to recognized Department of Public Health standards
  • Clean and sanitize dishes and other items by hand
  • Scour, clean and sanitize pots and pans
  • Clean and sanitize items such dish mats, carts and waste disposal units
  • Load and unload dishes, glassware and cutlery from the dumbwaiters
  • Put all other dishes, glassware, cutlery and kitchen wares in appropriate storage location
  • Replenish bulk milk, “ bag in box” soft drink syrup, and bulk juice when empty
  • Assist in unpacking and storing supplies in refrigerators, freezers, and storerooms
  • Help deliver and recover food and supplies from functions and the Ned’s Cafe
  • Keep equipment and work area clean and sanitized according to recognized health, safety and sanitation guidelines
  • At the end of the meal, remove kitchen garbage, recycling and composting and take to designated storage location
  • Sweep and mop dishroom area floors
  • Report any broken or malfunctioning equipment to the lead hand/supervisor on duty
  • Other duties as assigned

Housekeeping duties

  • Cleans and dusts furniture, floors, hallways and stairways, using appropriate equipment including heavy duty electric buffers, automatic floor machines, large dust mops, vacuum cleaners and other cleaning equipment
  • Reconditions floors as required; including stripping, refinishing, scrubbing, spray buffing, buffing, sealing and other related flood care duties
  • Cleans and scrubs washrooms, including lavatories, toilets, mirrors, floors, metal fixtures and bright work
  • Moves furniture within the work area when necessary
  • Collects waste from floors and receptacles. Removes waste from the building and takes to appropriate storage area
  • Washes windows and walls as required
  • Supplies paper towels, toilet paper and hand soap to receptacles in washrooms, work areas and other areas as required
  • Changes light bulbs when required
  • Clears exterior of entrance ways to Burwash Dining Hall of debris and garbage
  • Checks to ensure Burwash Hall is secure at the end of the shift
  • Report any broken or malfunctioning equipment to the lead hand/supervisor on duty
  • Other duties as assigned.

Salad Prep Duties

  • Assemble work area with appropriate products and equipment
  • Prepare and finish simple food items. Prepare salads, dips, sandwiches and canapés following standardized recipes and procedures under the direction of the Chef
  • Accurately interpret function sheet, to determine what and when food items need to be prepared
  • Arrange prepared food items on catering trays or in bowls in an attractive manner
  • Wash, peel and cut vegetables and fruit
  • Portion and wrap foods. Package takeout foods
  • Assemble, prepare and serve food as per customer request, placing emphasis on customer service and portion control
  • Keep equipment and work area clean and sanitized according to recognized health, safety and sanitation guidelines
  • Report any broken or malfunctioning equipment to the lead hand/supervisor on duty
  • Other duties as assigned

Porter duties

  • Unpack and store supplies in refrigerators, freezers, and storerooms, using proper stock rotation procedures
  • Reporting any deficiencies, shortages or damages in delivered goods to the Chef or First Cook
  • Keep the refrigerators, freezers and storerooms clean and orderly
  • Clear snow from entrances to Burwash Dining Hall
  • Clean loading dock & composting storage cooler with high pressure sprayer
  • Clean as you work, keeping equipment and work area clean and sanitized according to recognized health, safety and sanitation guidelines
  • Deliver food and finished takeout items to the Ned’s Café
  • Assist in the dishroom when necessary
  • Report any broken or malfunctioning equipment to the lead hand/supervisor on duty
  • To be able to communicate with internal and external contacts in person, online or over phone as instructed
  • Other duties as assigned
