This spring, restaurateur Chris Lucas will introduce Canberra to Carlotta, a brand-new concept in the heart of the nation’s capital. Carlotta, a 120-seat Mediterranean restaurant, is set to celebrate the exceptional produce, wine, and talent of the region.
About LUCAS Restaurants:

About the Opportunity:
LUCAS Restaurants are on the look-out for a Head Chef to join our opening team in Canberra. Reporting to the Executive Chef, the Head Chef will lead a talented team and ensure the kitchen operates to optimum efficiency.
Must be willing to relocate to Canberra.

The Ideal Candidate:

  • Demonstrated experience as either a Head Chef or Sous Chef in a high-volume kitchen environment
  • Experience with Mediterranean cuisine is advantageous
  • Track record of leading teams that deliver outcomes
  • Ability to manage staff performance, including unsatisfactory performance
  • Display exemplary leadership and passion for global cuisine trends
  • Understanding of financial budgets, food and labour costs
  • Experience in managing and maintaining food safety program including documentation
  • Rostering and ordering experience
  • Monitor and supervise OH&S standards and procedure
  • Ability to build and maintain effective relationships
  • Outstanding time management
  • Calm and composed demeanour
  • Qualification in Commercial Cookery or equivalent
