We have an exciting opportunity for an enthusiastic Head Chef to join the founding location of the 67 Pall Mall Members’ Club, located in the heart of London’s St. James’s.
67 Pall Mall is a Private Members’ Club, founded by wine lovers, for wine lovers, and is home to the finest wine list in the world.
At 67 Pall Mall our Events are a key factor of 67. We are seeking a vibrant individual to join our team on a full-time basis. This is an opportunity to work at one of the premier Members Clubs in the world.

Responsibilities:

  • To strategically, financially and creatively oversee the management of one of our kitchens at 67 Pall Mall, ensuring the consistent production of outstanding food and menus whilst maintaining a first-rate team of passionate individuals.
  • Ensuring all produce is purchased within company guidelines and that stock is controlled to the agreed standards maintaining GP margins within agreed budget.
  • To ensure the kitchen is efficiently always staffed and that weekly rota’s are written according to business needs and that staff are trained in all aspects of each kitchen section ensuring flexibility.
  • To be responsible for the daily control of the kitchens ensuring that all food is always produced and presented to the highest standards.
  • To ensure that menus are updated regularly mindful of seasonality.
  • To constantly keep up to date with current goings on in the industry, i.e., food trends, new restaurant openings etc.
  • To manage the Kitchen team ensuring appraisals and job chats are conducted regularly and within Company standards.
  • To work closely with the HR department in recruitment and retention, career progression and planning, for the Department and within Company standards always.
  • To show due diligence and to ensure that the department has outstanding and consistent hygiene practices, and that the department adheres to cleaning rotas and standard procedures.
  • To cater for Private Events in the club as required.
  • Ensure all health & safety and food safety guidelines within the kitchen.
  • Drive our focus and continue to create a positive working environment giving our people a work/life balance.
  • To be financially aware on revenue generating opportunities and manage costs.
