Responsibilities:
- Responsible for pre-shift briefing sessions and product knowledge within the outlet with regards to the Altitude wine list.
- Closely monitors the quality of wine and service to ensure a consistently high standards At Altitude restaurant and the other Food and Beverage outlets and banquets.
- Constantly checks the quality and quantity of beverages served to guests are in accordance with the standards of the hotel, and in accordance with the liquor laws in NSW, enforce RSA whenever required.
- Conducts daily meetings and briefings to explain beverage and wine items, discuss the various aspects of wine service and its presentation, review complaints and other comments received.
- Supervise Altitude restaurant service associates in all aspects of the daily operation of the outlet, providing the necessary assistance where required.
- When required, manages and ensures all Altitude restaurant opening and closing duties are carried out in accordance with the established procedure.
- Ensures the proper administration of, and control of the outlet budget, controlling costs and maximising profits.
- Closely monitors business forecast and keeps beverage par levels at the required level, to minimise costs
