Junior Sous Chef (Pastry) | Waldorf Astoria Dubai Palm Jumeirah
The Pastry Junior Sous Chef is responsible for the production and presentation of pastries and other baked goods. Assists the Senior Executive Pastry Chef in the daily activities of the kitchen, including menu development, inventory and purchasing of supplies and cost control.

  • All selected candidates are required to undergo a food trial in our kitchen
  • Skilled in creating, preparing/producing and decorating pastries and cakes.
  • Knife handling, pastry & baked goods knowledge.
  • Strong Supervisory/Management skills required.
  • Excellent oral and written communication skills required.
  • Five or more years pastry cooking/baking experience. Supervisory experience.
  • High School graduate or equivalent preferred. Advance degree or specialized training in Pastry is highly desirable.
  • Pastry/Bakery certificate or apprenticeship helpful.
  • Food hygiene and HACCP certificate.
  • Positive attitude.
  • Excellent grooming standards
  • Excellent planning and organizing skills

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

  • Luxury hospitality experience in a similar role
  • Specialized in Pastry/Bakery
  • Ability to work a variety of shifts including weekends, days, afternoons and evenings.

Responsibilities:

Specifically, you will be responsible for performing the following tasks to the highest standards:

  • Prepares/produces/bakes breads, rolls, breakfast pastries and desserts according to standard recipes, in order to contribute the overall guest satisfaction.
  • Creates and recommends menu changes to the Senior Executive Pastry Chef.
  • Decorates pastries/cakes with creativity and skill.
  • Maintains adequate supply of all prepared products on hand and ensures the proper storage and refrigeration of same.
  • Monitor and control the maintenance/sanitation of the pastry shop and equipment to ensure a healthy, safe work environment which meets/exceeds standards and regulations.
  • Ensures spoilage/waste are kept to a minimum by ordering and utilizing proper quantities and rotating products.
  • Set daily pars on all products to ensure freshness.
  • Supervise pastry section Team Members, train, empower, coach and counsel, resolve problems, provide open communication.
  • Providing a safe and secure environment by adhering to the company Health & Safety and Food Safety policies ensuring all areas are compliant with audit requirement
