EDUCATION
- College Diploma in Culinary field considered an asset
- Red Seal certification considered an asset
EXPERIENCE
- 2 – 3 years’ experience as a cook
- Experience with inventory
- Experience preparing meal alternatives in a nutritious manner following the Canada Food Guide
- Experience working with Homeless and Vulnerable populations
QUALIFICATIONS
- Must possess basic mathematical skills to understand recipes, measurements, requisition amounts and portion sizes
- Proven ability to demonstrate culinary techniques, i.e. cutting, cooking principles, safety and sanitation
- HACCP, WHMIS and City of Ottawa Food Handlers Certification essential
- Ability to work independently and as part of a team
- Good oral and written communication skills
- Good Computer Skills (i.e., Microsoft Office, etc.)
- Ability to multi-task
- Ability to work in a very fast paced environment
- Ability to lift up to 50 lbs
- Must be a self-starter with a sense of urgency
- Must be able to work with minimal supervision
- Flexibility in work hours, including early mornings and weekends
- Valid G driver’s license preferred
- Bilingualism (English/French) considered an asset
Responsibilities:
POSITION PURPOSE
Reporting to the Manager OM Kitchen Services (Manager) the Lead Food Truck Program Cook (Lead Cook) is responsible for preparing the meals that will be served out of the truck to the vulnerable communities the program serves. Following standardized recipes, they assist in the production of approximately 1,500 meals daily.
The Lead Cook is responsible for overseeing and checking all inventory including documentation (i.e. log sheets, invoices, etc.). They are responsible for ensuring all food services, deliveries, etc. are appropriately stored using the FIFO method and that all storerooms, fridges, freezers and garbage areas are clean and tidy.
The Lead Cook must adhere to sanitation practices and health and safety requirements. They assist with the training of new employees and Food Services Training Program students.
LEAD DUTIES
- Receiving and checking orders
- Receiving and distributing Food Bank Donations
- Organizing Food Truck stops and dealing with inquiries
- Weekly inventory including Food Bank inventory
- Monitoring temperatures and equipment to ensure proper function and document on temperature log sheets
- Printing schedules, working menus and sending invoices
- Sending OM Kitchen Services Manager paper orders, produce orders. Sysco orders, etc.
- Reporting issues with vehicles in a timely manner and organizing repairs with Fleet Coordinator
- Organizing maintenance requests in a timely manner
COOK DUTIES
- Attend daily production meetings
- Preparation of all meals to be served from the food truck
- Production of sauces, soups, stews and main entrees by using standardized recipes and implementing standard menus
- Preparing appropriate amount of food for the number of meals served, ensuring that every client is served a well-balanced meal following the Canada Food Guide
- Must follow standardized recipes
- Ensuring inventory is available for meals
- Assist in training and teaching new employees and FSTP students
- Working knowledge of all kitchen equipment and tools
- Receive food and other supplies deliveries, overseeing condition and handling of incoming goods
- Sweep and mop the kitchen floor as needed
- Dishwashing
- Clean and sanitize all kitchen appliances and equipment (i.e., fridges, freezers, stoves, hood fans, etc.)
- Maintain an atmosphere of courtesy and respect towards clients, staff and FSTP students
- Follow daily instructions or seek guidance from the Manager
- Adhere to all Legislated and Ottawa Mission policies and procedures, including all Health and Safety related policies and procedures
- Ensure all standards regarding hygienic food storage, preparation and serving are maintained in order to successfully meet all the requirements of inspections by the Ottawa Public Health Department
- Other related duties as required and/or assigned by the Manager
