Description:

JOB SUMMARY

We are seeking a highly skilled and innovative Product Developer with expertise in creating non-chocolate confectionery products, including no-sugar-added options, as well as natural health products using confectionery processes. The ideal candidate will have a deep understanding of ingredient functionality, proficiency in Design of Experiments (DOE), and experience conducting stability studies. Additionally, the candidate should be capable of preparing technical documentation for SR&ED (Scientific Research and Experimental Development) claims.

QUALIFICATIONS

  • Bachelor’s or Master’s degree in Food Science, Food Technology, Chemistry, or a related field.
  • 5-7 years of experience in confectionery product development.
  • Strong understanding of ingredient functionality, including sweeteners, bulking agents, and functional additives.
  • Proficiency in DOE methodologies for product and process optimization.
  • Experience in planning and conducting stability studies for food and health products.
  • Expertise in confectionery manufacturing processes such as molding, extrusion, and coating.
  • Experience preparing SR&ED claims or equivalent technical documentation.
  • Knowledge of food safety standards and regulatory guidelines (e.g., FDA, Health Canada, etc.).

KEY SKILLS

  • Strong problem-solving and analytical skills, with a focus on data-driven decision-making.
  • Proficiency in using statistical tools/software for DOE (e.g., Minitab, JMP, or equivalent).
  • Experience with designing and analyzing stability study protocols.
  • Excellent written and verbal communication skills for technical documentation and cross-team collaboration.
  • Ability to manage multiple projects and meet deadlines in a fast-paced environment.
  • Attention to detail and a passion for innovation in confectionery and health products.

Responsibilities:

Product Development:

  • Design and develop innovative non-chocolate confectionery products, including no-sugar-added options.
  • Develop natural health products using confectionery processes, adhering to regulatory guidelines.
  • Optimize recipes and formulations to meet desired taste, texture, nutritional profiles, and shelf-life requirements.

Ingredient Functionality & Process Development:

  • Evaluate and select ingredients based on functionality, compatibility, and cost-effectiveness.
  • Apply DOE methodologies to design, conduct, and analyze experiments for product and process optimization.
  • Conduct trials to understand ingredient interactions and their impact on product quality.
  • Stay updated on advancements in food science and ingredient technologies.

Stability Studies:

  • Plan, execute, and evaluate stability studies to ensure product performance and shelf-life under varying conditions.
  • Analyze data from stability tests to identify potential product degradation, changes in texture, flavor, or functionality, and address issues proactively.
  • Document stability study protocols, results, and corrective actions in compliance with regulatory requirements.

Technical Documentation:

  • Prepare detailed technical documents, including formulation records, process specifications, and project summaries for SR&ED submissions.
  • Document experimental processes, research findings, and innovations in a clear and comprehensive manner.
  • Ensure all documentation meets SR&ED compliance standards.

Process Optimization:

  • Collaborate with production teams to scale up formulations from bench to commercial scale.
  • Identify and resolve challenges in the manufacturing process, ensuring consistent product quality.

Regulatory Compliance:

  • Ensure all products meet food safety and regulatory requirements, including labeling and claims.
  • Collaborate with regulatory team to maintain compliance with health product guidelines.

Cross-Functional Collaboration:

  • Work closely with R&D, marketing, production, and quality assurance teams to align product development efforts with company goals.
  • Participate in taste panels and consumer feedback sessions to refine products.
