Responsibilities:

THE ROLE

Lead the Hospitality services across the operation to ensure that market-leading standards are consistently achieved and guest expectations are exceeded, particularly in the areas of Food and Beverage. This includes a specific focus on maintaining a high standard of F&B service across the Retreat, as well as overseeing activities, experiences, and events. Collaborate efficiently and effectively with other Service Team members to ensure the delivery of best-practice F&B and hospitality services at all times. Empower guest interactions by creating a visually, physically, and sensually engaging experience. Serve as an ambassador for Louma Farm and Retreat, supporting and driving its operations, public relations efforts, ongoing development, and overall success.

KEY RESPONSIBILITIES AND DUTIES

  • Follow set procedures and schedule for the service of food and drink across the array pf services offered to Guests and Visitors.
  • Have full knowledge and understanding of the food and drinks menus and items offered, inclusive of ingredients (allergens), preparation, presentation, availability, price, pairings / complements.
  • Upsell items of Food and Drink, and also Activities, Experiences and Events, to support drive of revenue and profitability.
  • Ensure all F&B areas are clean, sanitized, tidy and presentable to a high standard.
  • Ensure all required signage, barriers / screens, lifting, working-at-height, additional team support and other measures are organised / mobilised in advance, utilised as required and demobilised to maximize efficiency and comply with Health and Safety requirements.
  • Set areas as per approved standards and requirements for service and post service utilisation.
  • Maintain Service Stations with required equipment, materials, consumables, resources as required for high standard service.
  • Prepare menu and beverage mise-en-place as required for menus and service to ensure efficiency and effectiveness of service.
  • Liaise efficiently and effectively with the Kitchen Team and Guest Relations Team to ensure timely and proficient service and availability of food and beverage offering on a daily basis.
  • Support other Departments as required in the movement of items and set-up of areas.
  • Support the replenishment and control of stocks used across the Hospitality operation and ensure all required measures for access to stocks, stock replenishment, stock control administration are satisfied.
  • Have a comprehensive understanding of the CRM system and be totally proficient in its operation to ensure optimization of its functionality to ensure the highest service standards and accuracy for operational and governance requirements.
  • Take payments as required to fulfil duties, complying accurately with Financial Procedures.
  • Open / close and lock / unlock egress routes / points as per requirements of schedules and procedures.
  • Coordinate and facilitate a quality, varied and best-in-practice service of F&B, for Table Service, Buffet, Hampers and Quick Service working with the Executive Chef, Head of Operations and GM on production and implementation of SOPs across the operation.
  • Coordinate and lead in the set-up of dining tables, service areas and associated F&B areas.
  • Ensure standards are maintained by overseeing metrics for subjective and metric benchmarks, for layout, cleanliness, timings, consistency etc.
  • In coordination with Head of Operations organise / lead training for other staff as required to ensure service of offering to a consistent high standard at all times.
  • Oversee and maintain required stocks and audit on cutlery, crockery, glassware, linen, mise-en-place, equipment, cruets, hampers and decoration for F&B Service.
  • Coordinate the preparation of mise-en-place as required for operation.
  • Support Marketing in the activation of Activities, Experiences, Events, in terms of advertising, communication, sales and administration
  • Lead / participate in preparation, activation, clearance of Activities, Experience, Events.
  • Support in the control measures related to access onto the premises, into / around buildings, and designated areas, for the safety of Guests, Team Members, Partners and Third Parties.
  • Accept responsibility as a Competent Person in the implementation of the company’s Health & Safety Policy. Ensure the highest levels of Health & Safety are followed, complying with all Standard Operating Procedures, Risk Assessments, Operations Manuals, taking every effort to practice due care.
  • Identify and issues related to the building, site, facilities or services and report immediately to Line Manager.
  • Undertake other reasonable duties as requested by the Management
  • Weekend and evening work to satisfy the responsibilities.
