Description:

Responsibilities:

  • Ordering of all wines, beers and spirits and the management of the cellar and bar in conjunction with the F&B Manager.
  • To assist in the knowledge and training of F&B team to ensure excellent knowledge and overall improve the level of service
  • To ensure stock takes are conducted monthly in collaboration with the Finance Manager
  • To oversee the service of wine & liquors, making appropriate recommendations.
  • To keep traceability of all the beverages, make sure they are posted onto the proper room and to ensure the equipment is controlled and properly used.
  • Train other staff members and improve their knowledge on food & wine pairing.
  • Maintain and develop the wine cellar in conjunction with the F&B manager.
  • Work within and abide by all laws and regulations in relation to alcohol service.
  • To have excellent knowledge of cocktails recipes, spirits and cocktail making and also train the team on how to make classic cocktails.
  • To ensure appropriate glasses are used for different types of wine.
  • Making sure wines that need decanting are highlighted to the guest and decanting is carried out professionally
  • When needed ensure the Coravin is used to maintain and extend the life of wines served by the glass
  • Always make sure we have a suitable stock of glassware, barware and service items at all times.
  • To ensure wine is served at the right temperature.
  • To ensure wine and bar orders are placed every week and stock levels are maintained, using the PO system at all times.
  • To ensure the wine list reflects the standards set up after the opening and Wine Geese are represented.
  • To ensure the pricing structure for all the wine on the list is in line with the gross profit guidelines issued by Finance Manager and General Manager.
  • To ensure you research “En Primeur” wines worth investing in and laying down as future investments and relay the information to your F&B Manager.
  • Work with the F& B Manager /Assistant F & B Manager to ensure smooth running of the restaurant and guest experience is flawless.
  • To ensure gentle selling techniques are used to upsell and increase revenue.
  • To deliver both wine & whiskey tastings to guest and ensure the experience is of the highest standards.
  • To promote cellar tours, wine & whiskey tastings to guest to increase revenue.
  • To ensure the wine cellar is kept tidy and deliveries put away as quickly as possible leaving the cellar in perfect conditions for tours/tastings.
  • Assist in the preparation and setting of food and beverage areas.
  • To ensure the bar area, wine service area and all glasses are cleaned, polished and correctly put away at the end of service.
  • To ensure good communications between kitchen and Sommelier are maintained.
  • To keep up to date with menus in order to provide best options in terms of wine pairing.
  • Understand the service needs, standards of service and working practices involved in working functions and weddings which may involve different shift patterns.
  • Ensure you are well-presented and professional at all times
