As a Sous Chef at the British Pullman, A Belmond Train, you are part of a team that produces the highest quality cuisine for our guests. In this role, you will assist to design, create and deliver innovative and desirable menu offerings within agreed food costs and service parameters. REQUIREMENTS
- Applicants must have eligibility to work in the UK.
- 2-4 years’ relevant experience within a similar role, preferably within the luxury hospitality industry.
- Hospitality qualification advantageous.
- Proven leadership ability and experience in managing a team.
- Strong organisational, administrative and customer service skills.
- Extensive food knowledge, including awareness of current F&B trends and seasonality of ingredients.
Responsibilities:
- Acting as required as a senior culinary point of contact for internal and external clients.
- Actively working to build the brand and the quality of our culinary offering.
- Assisting with leading, mentoring, developing and disciplining the culinary team, ensuring evolution of skills across the team and clear succession planning in the department.
- Assisting with all menu engineering, tastings, spec sheets and allergens.
- Working at the depot kitchen and on board the train as required, including early mornings, weekends and evenings, and supporting special events as directed by the General Manager.
