Description:

Lancemore Lindenderry Red Hill, our luxury Mornington Peninsula boutique hotel is set amongst 34 stunning acres of gardens and vines. Our innovative and hatted restaurant, The Dining Room offers exceptional dining experiences with carefully curated seasonal menus.
We are looking for a talented Sous Chef to join us in a very exciting time for the property.
You will work with our exceptional Executive Chef to grow the culinary team to take something great and make it even better, consistently delivering a ‘must visit’ experience on the Mornington Peninsula.

Responsibilities:

WHAT YOU WILL BRING TO THE ROLE.

  • Experience progressing through a hatted or Michelin Star restaurant will be highly regarded
  • A passion for building a positive culture and ambition to lead and develop a team of young aspiring professionals
  • Proven leadership skills in building capacity in teams, setting high standards and creating high performing teams
  • Experience in collaborating to develop world class menus
  • An understanding of modern Australian cuisine and current market trends
  • Experience in a similar role in a five star hotel environment highly regarded
  • Sound knowledge and ability in managing kitchen financial controls including costing menus, maintain food cost control practices, labour costs etc.
  • Availability to participate both lunch and dinner on weekdays and weekends
