We are seeking a dynamic Laboratory Manager to lead our restaurant’s culinary research and development efforts. The Laboratory Manager will play a pivotal role in driving innovation, experimentation, and quality control in our culinary creations. Key Responsibilities:

  • Manage all aspects of the restaurant’s culinary research and development lab, including planning, execution, and documentation of experiments and trials.
  • Collaborate closely with the Executive Chef and culinary team to conceptualize and develop new dishes, techniques, and flavour profiles that reflect our restaurant’s culinary vision and ethos.
  • Source and procure high-quality ingredients and equipment for use in the lab, ensuring that all materials meet the restaurant’s standards for excellence and sustainability.
  • Conduct sensory evaluations and taste tests to assess the flavour, texture, and overall quality of new dishes and culinary innovations.
  • Implement quality control measures to maintain consistency and excellence in our culinary offerings, including recipe standardization and production guidelines.
  • Keep abreast of industry trends, scientific research, and technological advancements in food science and culinary arts, and apply relevant insights to our culinary development process.
  • Maintain accurate records of experiments, trials, and results, and prepare reports and presentations to communicate findings to the culinary team and management.

Requirements:

  • Previous experience in a culinary research and development role, preferably in a restaurant.
  • Strong understanding of food chemistry, flavour profiles, and culinary techniques, with a passion for exploring new ingredients and culinary innovations.
  • Excellent organizational skills and attention to detail, with the ability to manage multiple projects simultaneously and meet deadlines in a fast-paced environment.
  • Proficiency in laboratory equipment and techniques, including food analysis, sensory evaluation, and experimental design.
  • Strong communication and interpersonal skills, with the ability to collaborate effectively with the culinary team, management, and external partners.
  • Knowledge of food safety regulations and best practices in laboratory operations and sanitation.
