Description:

Responsibilities:

O To maintain the standard operating procedures for the Breakfast Department.
O To be fully familiar with the company standards, ensuring all colleagues are fully trained on these required standards.
O To oversee the day-to-day operation of the restaurant including breakfast, lunch, dinner, room service and lounge areas ensuring they are adequately staffed and supervised.
O To work closely with Senior Management in achieving required targets in relation to payroll and Gross Profit percentages.
O To work closely with the Head Chef/Deputy GM on menu planning.
O To work closely with the Head Chef/Deputy GM on food cost percentages and quality control.
O To ensure inventory stock takes are carried out and that the restaurant is adequately stocked and secured at all times.
O To ensure an organised order of work is in place and that best possible systems are in use.
O To communicate with all other departments and to work closely with all department heads at all times.
O Ensure Supervisors in the restaurant are carrying out their jobs in an efficient and organised fashion.
O To meet, greet and seat customers in the Restaurant / Lobby, using the guest’s name.
O To update and take bookings according to the procedures in the diary.
O To answer the telephone in a professional manner.
O To supervise and give attention to customers in the lounge.
O To manage the lounge areas.
O Responsible for any food and beverage services required from the restaurant throughout the hotel as requested.
O Implementation of the standards of service SOP’s within the restaurant department.
O To ensure all cash, charge, float and till procedures are carried out in compliance with company policy, ensuring all colleagues and supervisors are trained in such and have signed of a copy of the cash handling procedures which should be returned to the HR Department.
O To ensure any tips are distributed in line with company policy.
O Liaise with the Deputy GM on all management issues.
O To organise Departmental meetings, ensuring strong communication with all colleagues.
O Monitor equipment and supplies in the restaurant areas.
O Plan, organise, control and review all service and systems to provide the best possible service to guests.
O To Liase with Kitchen on aspects relating to food quality.
O To ensure appropriate levels of customer care is delivered at all times.
O To ensure a high level of hygiene throughout the department at all times, with a strict cleaning schedule in operation.
O To respect and maintain the equipment and furniture in the restaurant and lounge areas.
O To ensure we have a highly motivated team and all problems are solved mutually.
O To ensure monthly stock takes are done.
O To provide support in other areas of the hotel if necessary.
O Ensure all colleagues wear name badge and correct uniform at all times.
O Be aware of all Human Resources policies in relation to colleagues rules etc.,
O To ensure all employees receive adequate training during and on commencement of employment following a structured training plan and that all new employees attend induction.
O Compile weekly rosters and check daily ensuring adequate cover in line with business levels.
O Complete weekly Clock timesheets for payroll in a timely fashion.
O Responsible for ensuring that all colleagues Clock In /Clock Out on a daily basis. Ensuring all colleagues (including you) get breaks and that these breaks are recorded and clocked for on a daily basis.
O To assist in setting budgets and controls appropriate to ensure maximum profitability in all areas.
O Communicate with the Deputy GM weekly on staffing levels and recruitment requirements.
O To forecast wages on a weekly basis in areas of responsibility to ensure they are in
line with budgeted wage percentage and to take appropriate action where forecast is
above budget.
O Introduce and maintain a training programme for all new and existing employees. Ensure that ’15 minute’ standards training takes place with your colleagues on a daily basis.
O Responsibility for the day to day maintenance of the department, however where there is a maintenance issue that needs professional attention you can report it to the Maintenance Technician.
O To participate in all training programmes that you are scheduled for you and your team.
O Attend hotel meetings i.e. HOD, Departmental meetings as requested.
O To carry out job chats and performance appraisals.
O To carry out Duty Management shifts as requested.
O To inform the HR Manager of any issues relating to colleagues and be involved in disciplinary procedures where necessary.
O To ensure all colleagues have been trained in complaint handling and that complaints are dealt with in a courteous and sympathetic fashion and reported to Operations Manager if necessary.
O Responsible for ensuring that all start up documents i.e. Application Form, Contract of Employment, Employee Handbook, Job Description and other relevant forms along with legal requirements such as Photo, Passport, GNIB, letter from college etc.. (in the case of international colleagues) are given to the HR Department prior to commencement.
O Ensure that you are fully familiar with the company’s Information Security & PCI DSS Policy and that you have completed the PCI online training.
O To promote Hotel facilities, ensuring all your colleagues are trained to promote sales within the hotel and to upsell at every opportunity.
O Ensure all colleagues are fully aware and trained in various promotions within the food outlets.
O To work towards achieving high hotel inspection results
