Description:

Talbot Hotel Stillorgan, part of the Talbot Collection are looking for a Chef de Partie. The Chef de Partie will report to the Head Chef and Sous Chef. To provide a friendly and efficient service within the Kitchen Department. To deliver exceptional friendly service at all times, to every guest, in line with the Talbot Collection ‘Empower Your Excellence’ customer service program. To be respectful, polite, friendly, and unfailingly helpful in all your dealings with guests and colleagues alike, recognising that you are an ‘ambassador’ of the Talbot Collection at all times.

Responsibilities:

  • Preparation and presentation of all food for designated areas.
  • Maintain the high standards of cookery as laid down by the company.
  • Work supportively with the Head Chef and Sous chef to create a positive working environment within the kitchen that facilitates a great work-life balance for the kitchen team
  • Help Head Chef and Sous Chef with menu review and costing of the same.
  • Ordering the hotels food requirements in Head Chef and Sous Chefs absence or when directed.
  • Demonstrate excellent personal hygiene.
  • Assist in achieving the best gross profit levels and to control wastage.
  • Ensure cleanliness of the kitchen in all subordinate’s work methods.
  • Assist and carry out all HACCP controls as required under legislation.
  • Ensure all paperwork with regard to HACCP is completed
  • Assist the Head Chef and Sous Chef in all training plans and records, upskill and train the current kitchen team;
  • Control storage of food and assist in food stock control..
  • Follow rigidly all HR policies and procedures.
  • Work supportively with Head Chef and Sous chef to ensure that the kitchen reaches its budgeted GP’s;
  • Control and monitor all staff on duty in support of he Head Chef and Sous Chef ensuring all duties are being fully carried out in accordance with Company Procedures.
