Description:

POSITION SUMMARY:

Under the direction of the Regional Vice President, BC Metro this position is responsible for supporting strategic planning, and leadership of Gordon Ramsay Group Restaurants on behalf of Great Canadian Entertainment. The Director of Gordon Ramsay Restaurants is at its core a directive and supporting role that will be instrumental in executing a strong food and beverage culture and execution across all of the Gordon Ramsay restaurants. This role ensures adherence to the brand and all programs, policies, and procedures directly related. The Director, of Gordon Ramsay Restaurants motivates through accountability and leads by example, ultimately providing a positive working environment. This role is responsible for the planning, direction, and implementation of all food and beverage initiatives and actively participates in the Gordon Ramsay Restaurants recruitment and onboarding process.

KEY ACCOUNTABILITIES:

  • Lead, mentor and act as a resource for the Gordon Ramsay Restaurant Food & Beverage teams to ensure premium quality, exceptional service and culinary innovation
  • Support both Great Canadian Entertainment and Gordon Ramsay Group financial strategies by anticipating requirements, monitoring trends, and variances; co-developing budgets and capital expenditure plans; developing action plans, and evaluating results to minimize the impact of variances
  • Ensure consistent execution of menu/product brand to ensure alignment with Gordon Ramsay Group standards, and business plans.
  • Analyze current trends and execution of critical reports or measurements to create a competitive advantage within the industry and/or specific markets.
  • Develop and cultivate strong working relationships with all stakeholders: guests, leadership team, team members and vendors/contractors to support the execution of brand programs and partnerships aimed at building trust and brand commitment.
  • Ensuring all Gordon Ramsay Group Restaurants maintain safe, legal, and healthy work environments by establishing, following, and enforcing sanitation and quality of food and beverage preparation and service standards and procedures; monitoring conformance to the regulations of the alcoholic beverage commission; enforcing sanitation and legal regulations of all kitchens, bars, and service areas.
  • Drive cross-functional, cohesive communication and alignment across all stakeholders, both internal and external, to ensure efficient operations throughout all Gordon Ramsay Group Restaurants
  • Developing strategic plans including staff planning, recruiting; and team member development, and training.
  • Managing other initiatives as required

EDUCATIONAL AND FUNCTIONAL REQUIREMENTS:

  • Previous experience managing multiple separated outlets and managing operations to ensure the integrity and consistency of a major brand is maintained
  • At least 10 years of management experience in high-end restaurants/resorts is required.
  • Red Seal certification is required
  • Business degree, or a suitable combination of education and relevant experience is required and a Culinary Arts Degree or Masters Degree is preferred
  • American Culinary Federation Certified Executive Chefs (CECs) are preferred (and or certified Chef de Cuisine)
  • Knowledge and experience in developing strategies and successful culinary concepts for casual/luxury outlets

  • Demonstrated passion for providing great experiences and memories to internal and external guests in the continual quest to achieve service excellence
  • Experience working with local, regional and national vendors and in a regulated industry
  • Advanced experience and understanding of casinos or large multi-venue properties with experience in outlet openings
  • Serving it Right Licensee Certification and Food Safe level 1 and 2
  • Demonstrated ability to lead, influence and motivate diverse teams during change, while maintaining cooperation, motivation and cohesiveness
  • Thorough knowledge of all federal, provincial and local health regulations
  • Highly proficient in MS Office and POS management
  • Able to successfully obtain gaming registration through the Gaming Policy and Enforcement Branch (GPEB)
  • Exceptional communication skills; both verbal and written
  • Extensive knowledge of P&L, budgeting, forecasting, accounting & management expertise related to food and beverage management; to include, inventory control, product cost, waste.
