The iNUA Collection is looking for a talented and visionary Executive Head Chef to lead the kitchen of our Tullamore Court Hotel. In this exciting role, you will be responsible for all aspects of our culinary operation, ensuring that we deliver an unforgettable dining experience for our guests that reflects the unique character of Tulflamore and the best of Irish cuisine.

Responsibilities:

  • Provide leadership and direction to the entire kitchen team, fostering a positive, productive, and inclusive work environment.
  • Develop and implement innovative menus that showcase the finest seasonal and local Irish produce, while aligning with the iNUA Collection’s brand standards.
  • Oversee all aspects of food preparation, presentation, and quality control, ensuring the highest standards of culinary excellence.
  • Manage food cost controls, minimizing waste while maximizing profitability.
  • Develop and maintain strong relationships with local purveyors to source the freshest and most sustainable ingredients.
  • Lead by example, upholding the highest standards of hygiene and safety in the kitchen.
  • Stay current on culinary trends and techniques, constantly seeking to elevate the guest experience.
  • Monitor daily time sheets and compile each employee’s hours into weekly department timesheets and forward to Payroll.
  • Control and analyse departmental costs on an ongoing basis, acting to correct negative deviation.
  • Take ownership of the Department budget, analyse, take corrective action, and follow up where required.
