ABOUT THIS OPPORTUNITY:

We are seeking a motivated and driven Culinary professional to further drive our Kitchen operations. Our Executive Sous Chef will work closely with the Executive Chef and leadership team, overseeing the kitchens and events, supporting the Chef de Cuisine’s within these areas. This person will:

  • Foster and manage the development and engagement of the team, cultivating a positive work environment, in partnership with the Executive Chef.
  • Manage the delivery of our world-class event food to drive repeat business, achieve the department’s financial targets and contribute to the success of our reputation and brand.
  • Track, analyse and communicate management reporting.
  • Support the development and implementation of new innovations, contemporary and creative food concepts.
  • Ensure strict adherence to Food Safety standards.

REQUIRED SKILLS & EXPERIENCE:

  • Minimum 5 years of progressive culinary experience in a senior chef role in upscale or fine dining establishments with a focus on the client and customer food experiences desirable.
  • Extensive working knowledge of ISO 22000, HACCP principles, ISO 9001 Quality Management System, ISO 14001 (Environmental Management Systems), and ISO 45001 (Occupational Health and Safety Management Systems).
  • Demonstrated proficiency in comprehensive food costing, cost of goods analysis, labour cost analysis and effective waste management practises.
  • Strong understanding of menu engineering principles.
  • Proven people management skills including that of training, motivating, and directing team members to optimise workplace productivity and promote professional growth with a proactive and positive approach to problem-solving and staff management.
