Description:
An exciting opportunity has arisen for someone to join the Food and Beverage team as a ‘Food and Beverage Duty Manager’!

As a Duty Manager, you will be in charge of ensuring services run smoothly through thorough preparation and positioning staff to maximise service flow in line with our sales driving and profit goals. You will be required to maintain our products and services to be in line with the overall zoo mission statement and continually strive to meet and exceed our guests’ experiences.
We are looking for someone who will be instrumental in building top line sales and optimising costs to deliver exceptional results to both our customer base and staffing team. Reporting directly to the Chief Food and Beverage Officer, and working alongside a collaborative team of industry experts, you will regularly meet to discuss areas of opportunity and deliver information of key performance indicators during each week.
The successful candidate will have a demonstrated understanding for hospitality and the capacity to encourage a team to strive to achieve continual development and reach goals. Within this role you will be responsible for ensuring the functional operation of the Food and Beverage department to the highest standards.
Responsibilities:
- Coordinate and oversee the day-to-day operations of food and beverage outlets, including restaurants, cafes, kiosks, and activations under the direction of the Chief Food and Beverage Officer.
- Monitor inventory levels, and ensure efficient stock management.
- Coordinate with the Food Services Manager to maintain high standards of food quality, presentation.
- Ensure that guests receive outstanding service and have a positive dining experience by monitoring and developing individual staff skills.
- Implement strategies to enhance customer satisfaction in line with the overall objectives of the department.
- In collaboration with the Chief Food and Beverage Officer, conduct performance evaluations, provide feedback, and support staff development.
- Monitor sales performance, analyse financial data, and identify opportunities to maximise revenue and profitability within the department.
- Develop and implement cost control measures, such as managing food costs, labour expenses, and waste reduction.
- Work collaboratively to ensure compliance with food safety regulations, health codes, and licensing requirements.
- Conduct regular inspections and audits within all service areas to maintain cleanliness, hygiene, and safety standards.
- Collaborate with the Australia Zoo Events and Marketing team to coordinate Food and Beverage services for any requested special events.
- Execute any specialised catering services, including requested menu planning, staff coordinating and logistics when applicable.
- Support the Chief Food and Beverage Officer and the Australia Zoo Group WHS Team to develop and implement Workplace Health and Safety compliance, including development of policies, Risk Assessments, Training and Education of Staff and by completing regular safety inspections and audits.
