Job Description

POSITION OVERVIEW

The position is responsible in managing F&B operations in accordance with Aman standards and modern food and bar maangement techniques.

QUALIFICATIONS

  • Bachelor’s Degree from a reputable university.
  • At least five (5) years experience in the same capacity
  • Well verse in F&B products and services
  • Professional and diplomatic
  • Ability to comunicate with all levels of colleagues and guests
  • Refined skills in public relations
  • Has good business acumen

Responsibilities:

  • Ensures smooth and efficient operations of F&B service.
  • Ensures that service in bars, restaurants, and private dining are all carried out according to the standards set by the Resort Management.
  • Always act in the best interest of the company with regards to minimizing costs and maximizing revenue within the bounds of the operation.
  • Assists in the department budget development. Monitors food, beverages, and labor budgets.
  • Agrees menu and wine list, both content and pricing with Executive Chef and General Manager.
  • Aware of the daily and weekly specials in all outlets, pricing, and availability of products.
  • Monitors food & beverage cost results and discusses with the Executive Chef.
  • Monitors bar and beverage results.
  • Coordinates orders from all beverage/liquor suppliers to ensure best price, quality, and availability.
  • Monitors hygiene in work practices both service and production.
  • Regularly checks all areas for maintenance requirements and follow up.
  • Ensures that all machines and equipment are working.
  • Hires, trains, disciplines, manages, and schedules colleagues under Food & Beverage.
  • Conducts training and refresher course for all F&B colleagues.
