Description:
Responsibilities:
- Day to day operational management of front of house team of up to 30, fully utilising two Senior Managers plus a Bar Manager, Restaurant Manager and Events Manager.
- A particular focus from the start will be the bar which we need to deliver an acceptable ROI and will have its own P & L account.
- Overall responsibility for managing department payroll, holiday and sickness in line with hotel budgets.
- Overall responsibility for department employee training and development plan including quarterly 1-2-1’s for every employee.
- Full accountability for commercial success of Food and Beverage services, revenue growth, product pricing, marketing and promotion using the Central Marketing team.
- Full responsibility for delivering the required monthly beverage GP% and supporting the kitchen to achieve required monthly food cost %.
- Implementation of Forbes 5-star product and service standards across all operational areas, including employee uniform standards.
- Regular testing and tasting or food product with the Chef to keep things fresh and current.
- Supporting and working closely with the Events manager to maximise weddings, private dining, meetings, picnics, festival events and VIP dinners and receptions.
- Ability to work creatively with the Guests services team to ensure quality and creative in room welcome amenities and turn down treats are delivered to a consistent standard.
- Ensuring that all agreed standards and SOPs are kept updated and being followed including mini bars, in room beverage trays and specific guest amenities
