Description:

Mantra Albury, located in the bustling Riverina city offers Mantra’s trademark friendly hospitality. The property offers 146 spacious rooms from studio style to that of two bedroom as well as street facing District Dining restaurant, and onsite spaces for bespoke conferencing and events.
Purpose
As Head Chef, District Dining and Conferencing & Events, you will lead a small team who supports each other to achieve exceptional dining experiences. The opportunity is ideal for an experienced Sous Chef ready for their next career move, becoming a key member of the Executive Team at Mantra Albury.

The Role & Venue

  • Base salary of $88,000 + Super
  • Reporting directly to the General Manager your expertise will be instrumental in making decisions that not only impact the kitchen operations but that of the entire hotel
  • District Dining Restaurant open for Buffet Breakfast 7 days per week and A La Carte Dinner 6 days per week with a capacity to seat 40
  • Collaborate with the Sales team creating culinary offerings for onsite conferencing and events for up to 100

Primary Responsibilities

  • Bring your creativity and ideas to the table—we are all ears for fresh, innovative concepts!
  • Oversee the daily operations of the kitchen, including staff scheduling, inventory management, and kitchen hygiene
  • Partaking in and supervising the cooking process, ensuring that dishes are prepared to the highest standards in terms of taste, presentation, and portion size
  • Managing the kitchen’s budget, controlling food costs, and minimising waste to maximise profitability
  • Hire, train, and supervise all kitchen team members to ensure a smooth operation
  • Collaborate with the General Manager, front-of-house team, and suppliers to coordinate the overall dining experience and address any issues

Skills & Experience

  • Previous experience as a Senior Sous Chef or Head Chef with a track record of effectively leading kitchen teams
  • Menu development skills, crafting dishes with seasonal ingredients
  • Take great pride and passion in the food you produce with exceptional attention to detail
  • Strong organisational abilities for preparation, planning, and cost control
  • A natural team player that loves the synergy of a great team, but can also work autonomously with ease
  • Personal presentation & communication skills are imperative, along with positive energy & attitude
  • Flexibly to work across a range of shifts including weekends and public holidays as required
