Description:

Midleton Park Hotel, part of Talbot Collection, is currently recruiting for Head Chef to join the team.
The Head Chef will be required to work, full-time, 5/7 days per week, hours subject to business needs and business levels

Responsibilities:

Ensure the Kitchen is prepared in advance of each shift and in accordance with relevant SOPs
Ensure that all staff arrive to work on time and in correct uniform and name badge as per schedule and adhere to Clocking Policy
Develop, train and coach kitchen staff to the standards required by the kitchen
To prepare, cook and present all dishes and sauces to a high quality and consistent standard;
To ensure all dishes are prepared in a timely fashion;
Maintain regular communication with staff and management through meetings, discussions and handovers
To be aware and ensure compliance with all company policy’s regarding: Fire, Health & Safety, Hygiene, Food Hygiene, and Customer Care & Security
To liaise with all other Heads of Departments and Duty Managers to ensure high quality of service is always achieved
To work in conjunction with the General Manager & Operation Manager to ensure the smooth and efficient running of the department and overall Business
Creation and introduce new menu ideas.
Achieve the best gross profit levels and to control wastage;
Maintain a GP margin in line with Company expectations
Review and control the weekly payroll and expenditure for the department in line with budget.
To ensure all record- keeping in relation to hygiene is maintained;
