As a Raw Processor, you will deliver high-quality raw products to the fire and ferment processes according to specifications and quality. Whether cutting, slicing, grinding, chopping, mixing, stuffing, hanging, tending, storing, or cleaning, Production team members contribute to the production process by taking pride in producing the best charcuterie possible. Your job duties will include:

KNOWLEDGE, SKILLS, AND ABILITY REQUIREMENTS:

Responsibilities:

  • Formulate and scale batch ingredients, including whole spices, fresh herbs, starter cultures, and vegetables, adhering to Olympia Provisions’ quality standards.
  • Engage in vegetable prep for pickle production and maintain quality and safety protocols throughout operations.
  • Operate meat processing machinery for stuffing and hanging all sausages, ensuring whole muscle products are prepared within specified timelines.
  • Coordinate with production supervisors to ensure all tasks are completed efficiently, adhering to FDA and USDA regulations.
  • Update daily logs and batch labels to track in-process products, ingredient inventories, and ensure compliance with GMP, SOP, and SSOP.
