Description:
Responsibilities:
- Ensure the kitchen is clean, well maintained and organised at all times.
- Adhere to all sanitation and HACCP guidelines.
- Collect any additional or non-standard equipment from stores as may be required for the daily operation or as requested by a Supervisor or Chef.
- Maintain and clean all storage areas and shelving associated with such equipment
- Clean hoods and filters in all kitchen areas.
- Clean and sanitise all food storage areas, walk-in fridges and freezers, freestanding hot and cold boxes, bain-maries, dry store cupboards and food preparation equipment as needed.
- Conduct detailed clean and sanitizing of all kitchen areas and equipment, not limited to that which is listed previously, during overnight shutdown of the kitchen areas.
- Maintain the work schedule routine as organised by the Chief Steward / supervisor.
- Use situational awareness and initiative to predict and fulfil all equipment and sanitation requirements of the kitchen within the scope of your duties in an efficient manner.
- Work efficiently and effectively while unsupervised and performing routine daily tasks.
- Remove all bread, milk and other crates and drums from the kitchen area on a regular basis.
- Ensure floors are dry and clean at all times.
- Carry out general cleaning as directed to include sweeping and mopping up of floors.
- Cleans and maintains floors and walls in kitchen and dish washing area by following standard procedures.
- Clean all floors, drains, walls, ceilings and benches in kitchen and food areas.
- Operate pot-washing machinery and maintain a hygienic working environment in accordance with hygiene regulations and company standards.
- Cleans and sanitizes pots, pans, utensils, and other minor equipment routinely used in the kitchen following established procedures.
- Cleans and sanitizes dishes and related service ware following established procedures.
- Hand wash all pots, pans etc in a hygienic fashion using the “three sink” method.
- Regularly change the water and top up chemical whilst cleaning pots, pans, trays etc. to maintain optimum hygiene level.
- Help prepare buffet in restaurant, before food is set up and clear after service.
- Prepare chaffing dishes for Banquet buffet and functions. Prepare carving station as required.
- De-stain china and cutlery.
- Clean coffee urns after use.
- Clear all cutlery and crockery at bussing areas as required.
- Clean and sanitize the ice machines on a monthly basis or as requested by a supervisor.
